Milk. If you're making this sheet pan pancake mix from scratch, using buttermilk instead of milk can help to give a more restaurant-quality flavor. You could also use buttermilk in the pancake mix version if desired. Other milk like nondairy, whole milk, no fat, etc, will work just the same.
