    Easy Sheet Pan Pancakes

    These easy sheet pan pancakes make for a fast breakfast that everyone can enjoy! Make these sheet pan pancakes from scratch or from a mix and they'll turn out great every time!

    My 4 year old is obsessed with pancakes, but making them one at a time over the stove is too energy draining for me. That's why I love this sheet pan pancake recipe.

    I can whip up enough for the whole family in minutes while I focus on side dishes instead. If I'm just making pancakes for him, then I usually opt for Pancakes in a Mug.

    Not only that, but I can really get creative with the add-ins so that the pancakes feel special and fun. The kids think they're being treated, but really it's me. I get to spend less time on my feet and more time where it counts.

    Why This Recipe Works

    1. It's fast. Just mix the batter as you normally would and pour it into a baking sheet. I'd say this recipe is quicker than making pancakes one at a time in a skillet!
    2. You can DIY or use storebought. Have a pancake mix already on hand? Feel free to use it. Or you can make your own pancake batter from scratch. The details for both are included below.
    3. It's customizable. Add whatever toppings you want to your pancakes for a unique and flavorfully fun experience every time.

    🥘 Ingredients

    Pancake Mix Version

    Pancake Mix- This already has the flour, salt, and leavening agents needed.

    Milk- To moisten the batter.

    Eggs- To add richness and a binding agent to the mix.

    Vanilla Extract- A flavor enhancer.

    From Scratch Version

    All-Purpose Flour- The structural base of the recipe.

    Baking Powder- A leavening agent to help the pancakes puff up as they cook.

    Granulated Sugar- For added sweetness and structural support.

    Salt- A natural flavor enhancer.

    Milk- To moisten the batter.

    Eggs- To add richness and a binding agent to the mix.

    Butter- For added fats and richness.

    Pancake Mix Version

    Preheat your oven to 425 degrees F and prep a large 12x16 baking sheet with parchment paper or grease it well with nonstick spray.

    In a mixing bowl combine the pancake mix, milk, eggs, and vanilla until combined but do not overwork the batter.

    Pour the batter into the baking sheet and smooth it out into an even layer.

    Add your optional add-ins, if desired.

    Bake for about 10 minutes or until the pancake is fully cooked.

    🧾 Substitutions

    Pancake mix. You can use Bisquick, Krusteaz, Storebrand, or a homemade pancake mix if desired. I like to make buttermilk sheet pan pancakes using a buttermilk flavored pancake mix.

    Milk. If you're making this sheet pan pancake mix from scratch, using buttermilk instead of milk can help to give a more restaurant-quality flavor. You could also use buttermilk in the pancake mix version if desired. Other milk like nondairy, whole milk, no fat, etc, will work just the same.

    You can store your leftover pancakes in an airtight container in the fridge for up to 5 days. For best results eat within 3 as pancakes seem to dry out as they age in the cold air of a fridge.

    How to reheat leftover pancakes

    Reheat your pancakes on a baking sheet in the oven at 350 degrees F for about 5 minutes or warm them one or two slices at a time for a minute in the microwave.

    Notes

    Please note that the amount of time needed to bake your pancake will vary on several things including (but not limited to):
    • The add-ins (some, like sliced bananas or strawberries) take another minute or two to bake because they're high in moisture.
    • Not all baking sheets are the same size. If you use a smaller pan or a 9x13 baking dish your batter will be thicker and require a few extra minutes compared to someone who used a larger baking sheet and had a much thinner pancake.
    After 10 minutes is up, check on your pancake. It shouldn't look glossy or soupy and a toothpick should be able to come out clean if inserted. If your pancake still needs a little time, check back every 2-5 minutes. Your sheet pan pancake should be fully cooked by the 15 minute mark and within 20-25 minutes if you used a 9x13 baking dish.
