Canned Green Beans- Drain a can of green beans and add them in. While fresh or frozen green beans could be used, we really like the texture of the canned green beans in this casserole.
Seasonings- For a great combination of flavors you'll want to use Cajun seasoning, garlic powder, salt, black pepper, and red pepper flakes.

Smoked Sausage. Swap smoked sausage for kielbasa, cubed ham, or cooked bacon pieces. Any fully cooked sausage works.

Potatoes. Red, yellow, baby potatoes, or fingerlings are ideal because they don't need peeling. Russets or sweet potatoes work too, just peel first due to their thicker skins.

Step 1: Preheat your oven to 400°F. Lightly grease a 9×13 baking dish and set aside.

Step 2: Wash the potatoes (peeling optional), then cut them into 1-inch cubes. Add them to a large mixing bowl. (Image 1)
Step 3: Add the salt, Cajun seasoning, garlic powder, black pepper, red pepper flakes, and olive oil to the bowl. (Image 2)
Step 4: Toss well to evenly coat. Set aside. (Image 3)
Step 5: Slice the smoked turkey sausage into ¼-inch coins. Add them to a large skillet over medium-high heat. (Image 4)

Step 6: Cook sausage until browned on both sides. (Image 5)
Step 7: Transfer the browned sausage to the bowl with the potatoes.
Step 8: In the same skillet, melt the butter. (Image 6)
Step 9: Add the diced onion (Image 7) and cook for 2-3 minutes, until softened.
Step 10: Stir in the minced garlic and cook 30-60 seconds more, until fragrant. (Image 8)

Step 11: Let this mixture cool slightly, then add it to the bowl with the potatoes and sausage. (Image 9)
Step 12: Add in the drained, rinsed green beans. (Image 10)

Sausage Green Bean Potato Casserole
Ingredients
