    This sausage potato green bean casserole is an incredibly simple and easy dish to throw together for dinner. With minimal ingredients and steps, this is an easy sausage and potato casserole to keep on hand for any lazy dinner night.

    🥘 Ingredients

    Smoked Sausage- You can use smoked sausage, kielbasa, or anything similar.

    Red Potatoes- You can use red potatoes, yellow potatoes or even baby potatoes for this recipe.

    Canned Green Beans- Drain a can of green beans and add them in. While fresh or frozen green beans could be used, we really like the texture of the canned green beans in this casserole.

    Olive Oil- This will help to coat everything well so that the seasonings stick.

    Butter- For added richness and fats.

    Onion- This is aromatic that adds a nice depth of flavor and sweetness when cooked.

    Garlic Cloves- For added flavor. You can use fresh minced garlic or the stuff from the jar.

    Seasonings- For a great combination of flavors you'll want to use cajun seasoning, garlic powder, salt, black pepper, and red pepper flakes.

    🔪 Instructions

    Check out how to make sausage green bean potato casserole with these simple step-by-step instructions:

    Preheat your oven to 400 degrees F and grease the inside of a 9x13 baking dish. Set it aside.

    Wash your red potatoes (peeling is optional) and dice into 1 inch sized cubes.

    Place the potatoes into a large mixing bowl and add in the seasonings. Set aside.

    Slice your smoked sausage into ¼ inch sliced coins and place them into a skillet over medium-high heat. Cook until browned on both sides.

    Add your sausage to the bowl of potatoes.

    Add the butter to the skillet and cook your onions and garlic for about 3 minutes or until the onions are soft.

    Add the onions to the mixing bowl.

    Gently mix everything in the bowl together until well combined.

    Lightly mix in the green beans, being careful so that they don't break.

    Pour the mixture into the prepared baking dish.

    Cover the top of the dish well with aluminum foil.

    Bake in the oven for 40-45 minutes or until the potatoes are fork-tender.

    Uncover the dish and serve warm.

    🧾 Substitutions

    Smoked sausage. You can replace the smoked sausage with kielbasa for a kielbasa potato green bean casserole if desired. Cubed ham or thick chunks of bacon could also work well.

    Green beans. If you do not wish to use canned green beans, you can use frozen (thawed) green beans, fresh (washed and trimmed) green beans instead.

    Red potatoes. You can use red potatoes, golden potatoes fingerling potatoes or baby creamers depending on whats most available. Using russets or even sweet potatoes is fine but the potatoes will need to be peeled first because they have a much thicker skin.

    🍴 Recipe Tips

    This recipe can be a tad "spicy" for some so feel free to adjust the seasonings to suit your own tastes. Omitting the red pepper flakes can really help to make this dish a bit more kid-friendly if you've got picky eaters (like I do).

    If desired you can swap out the Cajun seasoning blend with just about any other seasoning blend you may have on hand. This recipe works great with Soul Food Seasoning blend and Italian Seasoning.

    Note that if you choose a salted seasoning blend you'll want to omit the salt and then just add salt and pepper to taste when you're ready to serve it.

    ⏲️Make Ahead Instructions

    You can prepare this sausage green beans and potatoes recipe up to a one day in advance and keep it covered in foil in the fridge until ready to cook. Allow the pan to rest on the counter for about 30 minutes as the oven preheats so that it can come to room temp before heating.

    Or, keep the casserole assembled in a gallon sized baggie in the fridge and then pour into a baking dish and bake (no resting time is needed because your pan is already room temperature.)

    Yes, just make the casserole as directed by browning the sausage and cooking the onions and simply stir everything together in the crockpot. Place the lid on top and then cook on high for 4 hours.

    By using a vegan butter (or olive oil) and by swapping out the sausage for sliced mushrooms you can make this recipe vegan friendly and give it a nice meaty texture without the actual meat.

    • 12 ounce Smoked sausage 3.98)
    • 2 pounds Red potatoes ($2.48)
