Smoked Sausage- You can use smoked sausage, kielbasa, or anything similar. If you have more sausage to use up, try it in our Sheet Pan Gnocchi With Sausage and Vegetables.
Red Potatoes- You can use red potatoes, yellow potatoes or even baby potatoes for this recipe.
Canned Green Beans- Drain a can of green beans and add them in. While fresh or frozen green beans could be used, we really like the texture of the canned green beans in this casserole.
Seasonings- For a great combination of flavors you'll want to use cajun seasoning, garlic powder, salt, black pepper, and red pepper flakes.

🧾 Substitutions
Smoked sausage. You can replace the smoked sausage with kielbasa for a kielbasa potato green bean casserole if desired. Cubed ham or thick chunks of bacon could also work well.
Green beans. If you do not wish to use canned green beans, you can use frozen (thawed) green beans, fresh (washed and trimmed) green beans instead. If you still have canned green beans, make sure to try the The Best Canned Green Bean Recipe.
Red potatoes. You can use red potatoes, golden potatoes, fingerling potatoes, or baby creamers, depending on what's most available. Using russets or even sweet potatoes is fine but those potatoes will need to be peeled first because they have a much thicker skin.
🔪 Instructions for Sausage Green Bean Potato Casserole
Step 1: Preheat your oven to 400 degrees F and grease the inside of a 9x13 baking dish. Set it aside.
Step 2: Wash your red potatoes (peeling is optional) and dice into 1 inch sized cubes.
Step 3: Place the potatoes into a large mixing bowl and add in the seasonings. Set aside.
Step 4: Slice your smoked sausage into ¼ inch sliced coins and place them into a skillet over medium-high heat. Cook until browned on both sides.
Step 5: Add your sausage to the bowl of potatoes.
Step 6: Add the butter to the skillet and cook your onions and garlic for about 3 minutes or until the onions are soft.
Step 7: Add the onions to the mixing bowl.
Step 8: Gently mix everything in the bowl together until well combined.
Step 9: Lightly mix in the green beans, being careful so that they don't break.
Step 10: Pour the mixture into the prepared baking dish.
Step 11: Cover the top of the dish well with aluminum foil.
Step 12: Bake in the oven for 40-45 minutes or until the potatoes are fork-tender.
Uncover the dish and serve warm.
