Rice krispie treats are iconic snacks that have been around for ages, but traditionally they're made with mini marshmallows, not fluff.
Making rice crispy treats with marshmallow cream gives us the same great taste but without the chewy consistency. These Rice Krispie Treats in a Mug are also soft to eat but only come in a single-sized portion.
For some, traditional rice krispie treats can be a challenge to eat (braces, dentures, etc). But, rice crispy treats with marshmallow fluff, are soft enough that they practically fall apart in your hands. These make them a game changer for all of us struggling to eat chewier or firmer foods.

Ingredient Notes:
Marshmallow fluff- You'll need a jar of marshmallow fluff or marshmallow creme to make this recipe. If you find a jar that's an ounce or two bigger than requested, it's fine to use it instead. I've noticed that different jars/brands and stores carry different sized containers.
Butter- You can use salted or unsalted butter for this recipe. I personally prefer salted butter because I always have it on hand, but either one will work.

🔪 Instructions for Rice Krispie Treats with Marshmallow Fluff
Step 1: Grease the inside of an 8x8 baking dish with softened butter and set aside.
Step 2: Add your butter to a large pot over medium-low heat. Cook until melted.
Step 3: Add in the marshmallow fluff by using a rubber spatula to scrape the inside of the jar as best as you can.
Step 4: Stir until the fluff seems fully incorporated and softened.
Step 5: Remove the pot from the heat.
Step 6: Add in the cereal.
Step 7: Stir in the rice crispy cereal until fully coated.
Step 8: Transfer the cereal mixture to the prepared baking dish and use greased hands or a spatula to press down on the cereal and compact it into the dish. It helps when using something butter coated as the cereal is less likely to stick to butter.
Step 9: Allow the cereal to cool and set for an hour or two before slicing and serving.
🍴 Recipe Tips
- To grease your pan for Rice Krispie treats, use butter or cooking spray.
- Grease your hands before pressing the mixture to prevent sticking.
- After cooking, cool for an hour before slicing. Line the pan with parchment paper for easier removal.
- Cook over medium/low heat to avoid overcooking marshmallows. The lower the heat the longer it will take but it prevents overcooking the marshmallows and allows them to turn out perfect and gooey. Room Temp. You can store these Rice Krispie treats in an airtight container or zipper topped baggie for up to a week or two at room temperature. I recommend eating them sooner rather than later as they'll taste best when fresh.
Freezer. Rice Krispies are very freezer friendly. To freeze your treats, place them in an airtight container or individually wrap serving-sized squares in plastic wrap before placing them in a freezer-safe container. Then freeze for up to 3 months. Thaw at room temperature before eating. They won't take long to thaw!

Yes, absolutely! Simply use any margarine instead of butter and follow the recipe as requested. The end result should be a soft texture that tastes fabulous. Another great alternative is to use coconut oil instead of butter, but it will leave a coconut flavor behind. We use coconut oil in our Dairy Free Rice Krispie Treats.
If you overcook, overstir, or overheat your marshmallows and butter then you can easily end up with hard cereal treats. I recommend cooking at a low to medium temperature. Slow might take longer but it won't overheat and stirring every once in a while keeps you from overworking the sugars too.
While there is no dairy in these treats, they are not vegan-friendly. Marshmallows contain an ingredient that is not vegan friendly (gelatin) and cereal would need to be purchased specifically labeled as vegan.
