- It's simple. Just wash your sausage and veggies, slice, and mix with seasonings before baking. We won't need many items to make this sheet pan meal, and you can toss it all together on the pan before baking.
- It's cheap. Even with food inflation prices, garden fresh veggies and sausages seem to remain frugal options for the table (as long as the veggies are in season). Made with basic seasonings, we calculated this recipe to cost about $11, which is almost as cheap as our Sausage Green Bean Potato Casserole!
🛒 Ingredients

Cherry tomatoes. Add bright color and juicy acidity. Grape tomatoes work too. Use extras in Tilapia with Spinach and Tomatoes, Scrambled Eggs with Spinach and Tomatoes, or Homemade Hamburger Helper.
Summer squash- A mix of zucchini and yellow squash gives great flavor and color.
Smoked turkey sausage- Affordable, flavorful, and easy to slice. Kielbasa or chicken sausage work too.
Potato gnocchi- Budget-friendly and cooks right on the sheet pan. (We often grab the Dollar Tree gnocchi, cheap and dependable.)
See the recipe card below for full ingredients and instructions.
🔀 Substitutions & Variations
Meat: Swap turkey sausage for kielbasa, chicken sausage, or omit entirely for a veggie version.
Tomatoes: Stick to cherry or grape tomatoes so they stay firm while roasting.
Veggies: Add sliced bell peppers or 1 cup diced sweet potato or butternut squash for extra color and nutrition.
Seasonings: Adjust the red pepper flakes to your preferred heat level or omit for mild.
💰 Budget-Friendly Tips
Buy sausage on sale. Smoked sausage freezes beautifully and often drops to $2-$3 per pack.
Choose in-season veggies for the lowest price (summer squash and tomatoes are especially cheap in peak months).
Use Dollar Tree gnocchi or store-brand for the lowest cost. Tastes great once roasted.
Stretch it further by adding one extra vegetable (zucchini, peppers, onions).

❓ Recipe FAQs
The leftovers from this dish can be saved in an airtight container in the fridge for up to 5 days. Just reheat when ready to eat.
I purchase my gnocchi from the local dollar tree because I find that the containers are the same price at half the cost of my local grocery store. I almost always keep a package two in the pantry for quick dinners (I use them as dumplings in my soups).
First, make sure that the gnocchi you are using is 100% vegan as some often contain dairy or eggs. Next, swap out the turkey sausage for vegan sausage. Then just make and bake as directed.

Notes
- Sausage swaps. Substitute with chicken sausage, kielbasa, or a plant-based sausage if desired.
- Vegetable add-ins. Thinly sliced bell peppers or 1 cup diced butternut squash or sweet potato can be added at the start.
