Ingredient Notes:
Boxed Frozen Taquitos: You can use a box of beef or chicken flavor (any flavor works) but a 20 count box fits perfectly within a 9x13 baking dish. You will NOT need to thaw the taquitos for these frozen taquitos enchiladas.
Enchilada Sauce: Use red or green. I like beef taquitos with red sauce and chicken taquitos with green sauce.
Cheese: I like to use storebought shredded because it saves time, but shredding cheese yourself will make it more melty and gooey.

Make sure that you generously coat the baking dish with cooking spray before placing the frozen taquitos in it. This step simplifies cleanup later. Spraying the tops of the taquitos is crucial for achieving a crispy texture before smothering them in the sauce.
For a nicer texture in your taquito-based enchiladas, it's essential to first bake the taquitos on their own to heat them up, and then bake them again with the sauce and cheese on top. Baking them all together in one step won't yield the desired results.

You can use any brand that you would like or that you already know and love. I personally enjoy the Aldi store brand but you can use any of them.
Enchiladas are usually served with other Mexican side dishes like rice and beans or chips and guacamole, but you can also switch things up by doing grilled veggies, corn salad or black bean salad.

Instructions
- Preheat your oven to 350 degrees F.

Notes
- Make sure to follow the steps in order. We cook the taquitos for a bit by themselves to help the skin crisp and the centers to warm up. Adding everything to the pan at once will cause soggy results and possibly undercooked taquitos.
- Reheating. Reheat your taquitos in the microwave on a plate for 1-2 minutes depending on how many taquitos you cook at once. More taquitos= more time.
- Any brand of taquitos will work but I recommend sticking with the ones that you already know and love.

I used chicken taquitos, mild red enchilada sauce & put black olives & green onions on top before putting in oven foil covered. I absolutely loved this! It was fast & tasty! 375 for 25 minutes. Garnished with sour cream, mild salsa & shredded lettuce when done :). I will make again!
