Sheet pan breakfasts (or more like brunches) have totally become a thing around here. I already enjoy our baked Rainbow Grilled Cheese during the afternoons, but breakfast has gotten pretty inventive.
So when we want a full breakfast with minimal cleanup, this Sheet Pan French Toast Breakfast is our go-to. From the fluffy French toast to the sunny side up eggs and crispy bacon, this recipe truly has it all.

Bacon- Use thick or thin cut bacon depending on what you have on hand or prefer, but if it's thin cut, you'll want to keep a closer eye on it so that it doesn't burn.

🥄 Instructions for Sheet Pan French Toast Breakfast
Step 1: Preheat your oven to 400 degrees F.
Step 2: Lay 4 strips of bacon along the side on a greased large baking sheet.
Step 3: Place the baking sheet in the oven for 5 minutes.
Step 4: While the bacon is cooking, prepare your french toast mixture.
Step 5: Whisk together the eggs, cinnamon, and vanilla in a pie plate or shallow bowl until well blended.

Step 6: Remove bacon from oven.
Step 7: Dip a slice of bread in the bowl and evenly coat both sides.
Step 8: Lay the four pieces of french toast along the opposite side of the baking sheet.

Step 9: Place in oven for 5 minutes.
Step 10: Remove the pan from the oven. Flip the french toast over so that the other side can be cooked.
Step 11: Remove the bacon if it is cooked to your liking and let it rest on a plate covered with foil or leave it on the pan if you want it more crispy.
Step 12: Crack 4 eggs in the center of the pan. Be careful as you apply the eggs to the pan as they might slide if your pan is bent.

Step 13: Cook for an additional 5-8 minutes depending on how well done you like your eggs. 5 minutes will give you a soft yolk (over easy), whereas 8 minutes will be a "fried hard" result.
Step 14: Remove the baking sheet from the oven and serve warm.

Many chefs will say yes or they'll tell you to take a moment and dry your bread before using, but I'll be honest- I never do. I just grab a sandwich slice and whip up an egg mixture. Let the bread soak in the mixture for a few seconds and you'll still get a custard-like filling with caramelized outsides as intended.
You can reheat french toast by placing it on a plate and microwaving a slice or two at a time for a minute to a minute and a half. You can also place it in the oven at 200 degrees F for about 5 minutes.

Sheet Pan French Toast Breakfast
Ingredients
- 4 strips bacon - ($0.40)
- 6-7 large eggs, divided - ($0.90)
- ½ teaspoon ground cinnamon - ($0.04)
- ¼ teaspoon vanilla extract - ($0.01)
- 4 slices sandwich bread - ($0.24)
Instructions
- Preheat. Preheat the oven to 400°F and grease a large rimmed baking sheet.
- Start bacon. Arrange the bacon strips along one side of the baking sheet. Bake for 5 minutes.
- Mix custard. While the bacon cooks, whisk together 2 to 3 eggs, cinnamon, and vanilla in a shallow bowl until well combined.
- Add French toast. Remove the pan from the oven. Dip each slice of bread into the egg mixture, coating both sides, and place the slices on the opposite side of the baking sheet.
