Peanut butter and banana are a wonderful flavor duo and one we always enjoy in recipes like our Peanut Butter Banana Overnight Oats or Chunky Monkey Overnight Oats!

But this banana peanut butter mug cake is one of our latest favorites. Made with just one ripe banana we can get two decent sized treats. Perfect for a late night snack with someone special.

Made to taste like a fresh batch of banana bread, but with a savory twist. Perfect for when you don't have multiple bananas around to make some Moist Banana Bread or Stovetop Banana Bread.

You don't want to waste the banana and you don't want to commit to a Strawberry Banana Orange Smoothie in the morning, so what to do? Make a single (or double) portion of microwaved banana bread that's so good you won't want to share.

Banana: Use a very ripe banana for maximum sweetness and easy mashing-deep yellow with brown spots or nearly black. If you have extra bananas, try my Banana Bread With Strawberries or Banana Oreo Milkshake.

Baking Powder: Essential for helping the banana bread rise as it cooks.

Peanut Butter: Creamy peanut butter adds richness and flavor.

Brown Sugar: Provides sweetness and depth; brown sugar works perfectly for this small-batch recipe.

🥣 Recipe Add-Ins

Classic Add-Ins: Stir in up to ¼ cup of chocolate chips, butterscotch chips, white chocolate chips, walnuts, or similar mix-ins. Add them at the end, right before pouring the batter into your baking dish.

Get Creative: Add-ins can be anything from cereal (like my Fruity Pebbles Banana Bread) to chocolate chips and oats (like in my Oatmeal Chocolate Chip Banana Bread). Mix and match your favorites!

💰 Budget-Friendly Tips

Use overripe bananas: The darker the banana, the sweeter the bread-saving you money on extra sweeteners. Overripe bananas are often discounted or already sitting on your counter!

Skip the extras: Add-ins like nuts or chocolate chips are optional. The bread tastes great on its own, so you can skip them to keep it budget-friendly.

🥄 Instructions for Peanut Butter Banana Mug Cake

In bowl, mash banana until smooth. Add egg, milk, vanilla.

Step 1: Place a peeled ripe banana into a small mixing bowl or large cereal bowl (Image 1).

Step 2: Mash until no large chunks remain (Image 2).

Step 3: Add in the egg, milk, and vanilla (Image 3).

Step 4: Whisk until fully combined (Image 4).

Add peanut butter, whisk until fully incorporated. Add flour, brown sugar, baking powder, salt.

Step 5: Add the peanut butter (Image 5).

Step 6: Whisk until the peanut butter is fully incorporated (Image 6). This might take a moment.

Step 7: Add in the flour, brown sugar, baking powder, and salt (Image 7). Whisk until just combined (Image 8). Do not overmix.

Pour batters into pint-sized mason jar. Cook.

Step 9: Divide the mixture between two mugs and cook for 1 minute each (one at a time). OR make one large serving in a mason jar (Image 9).

Step 11: Cook in the microwave for 2 minutes or until the top is no longer wet (Image 10) (a small spot is okay, but you don't want it to look undercooked and soggy).

Step 12: Cool for two minutes before serving.

I like to add a little more peanut butter on top before serving.

👩🏻‍🍳 Expert Tips

  1. Peanut Butter Notes: I haven't tested this recipe with natural peanut butter or alternative nut butters, so results may vary. If you try it, let me know how it turns out!
  2. Use the Right Container: This recipe makes more batter than a standard coffee mug can hold once baked. Be sure to use a larger microwave-safe bowl or ramekin to prevent spillover.
  3. Best Served Fresh: This banana bread is at its peak when enjoyed hot and fresh right after cooking.

❄️ Storage

You can place a lid and rim on the mason jar right after cooking to let it "self-seal" as it cools. This won't extend shelf life like true canning, but it will help keep the banana bread fresh for 2-3 days at room temperature, perfect for packing in a lunch box.

Enjoy your mason jar banana bread with fresh fruit, whipped cream, or a drizzle of caramel or chocolate for a sweeter treat. It also pairs wonderfully with hot coffee, tea, or cocoa for a cozy and satisfying snack.

Why are mug cakes rubbery?

Soft or rubbery textured mug cakes are usually a direct result of overcooking the cake. This can happen if your microwave runs hot, if you use the wrong sized mug and overfill the cup, etc. Reduce the cooking time the next time by 10-15 seconds and you may have better results. Trial and error is often needed to get it right.

Why is my microwave cake hard?

If you overactivate the gluten in the flour by mixing too much, you can have a dense cake as a result. The same would happen for any baked goods.

Can I use gluten free flour for this recipe?

If using gluten free flour, I recommend using Bobs Red Mill 1:1 ratio baking flour. This will give you the closest results without the gluten.

Ingredients
 

  • 1 mashed banana, about ⅓ cup - ($0.25)
  • 1 large egg - ($0.15)
  • 1 tablespoon milk - ($0.01)
  • 2 teaspoon vanilla extract - ($0.06)
  • 1 tablespoon creamy peanut butter - ($0.05)
  • 2 tablespoons brown sugar - ($0.06)
  • 3 tablespoons all-purpose flour - ($0.02)
  • ½ teaspoon baking powder - ($0.02)
  • 1 pinch salt, about ⅛ teaspoon - ($0.01)

Instructions

  • Mash banana. Add the peeled banana to a small bowl or large cereal bowl and mash until smooth with no large chunks.
  • Mix wet ingredients. Whisk in the egg, milk, and vanilla extract until fully combined.
  • Add peanut butter. Whisk in the peanut butter until smooth and fully incorporated.
  • Add dry ingredients. Add the brown sugar, flour, baking powder, and salt. Whisk just until combined. Do not overmix.
  • Cook. Divide the batter between two microwave safe mugs and cook one at a time for 1 minute each, or pour all of the batter into a pint size mason jar and microwave for about 2 minutes, until the top is mostly set.
  • Cool and serve. Let cool for 2 minutes before serving. Top with additional peanut butter if desired.

Notes

  • Peanut Butter. This recipe has not been tested with natural or alternative nut butters.
  • Serving Size. The batter yields more than a standard mug can hold.
  • Best Texture. Best enjoyed hot and fresh. For short term storage, cover and refrigerate for up to 2 to 3 days.
  • Optional Add Ins. Chocolate chips, butterscotch chips, white chocolate chips, or chopped walnuts can be added before cooking.
