Peanut butter banana mug cake is a simple treat perfect for making just one or two servings. You'll get a cupful of savory sweet banana bread in just minutes.
Mash banana. Add the peeled banana to a small bowl or large cereal bowl and mash until smooth with no large chunks.
Mix wet ingredients. Whisk in the egg, milk, and vanilla extract until fully combined.
Add peanut butter. Whisk in the peanut butter until smooth and fully incorporated.
Add dry ingredients. Add the brown sugar, flour, baking powder, and salt. Whisk just until combined. Do not overmix.
Cook. Divide the batter between two microwave safe mugs and cook one at a time for 1 minute each, or pour all of the batter into a pint size mason jar and microwave for about 2 minutes, until the top is mostly set.
Cool and serve. Let cool for 2 minutes before serving. Top with additional peanut butter if desired.
