Olive Oil- This is needed to help coat the chicken and potatoes. It gets the dry seasonings to stick and helps the items to crisp up as they cook.

Boneless Chicken Thighs: You can swap in boneless thighs if preferred. They cook faster, so pull them from the air fryer 2-4 minutes before the potatoes to avoid overcooking.

Step 1: Add your seasonings to a small bowl.

Step 2: Mix well to combine and then set aside.

Step 3: Wash and dice your potatoes into 1 inch sized cubes. Place into a large mixing bowl.

Step 4: Add in 2 tablespoons of the seasoning blend, 2 tablespoons of olive oil, and the minced garlic.
Step 5: Toss together until well coated.

Step 6: Place the potatoes into the air fryer basket. You will leave seasoning and garlic behind in the bowl, this is okay!

Step 7: Add the chicken thighs to the same bowl that the potatoes were in and top with the remaining seasonings and olive oil. Mix well to coat all sides.

Step 8: Place the chicken thighs, skin side up, on top of the potatoes.

Step 9: Air fry at 360 degrees F for 25 minutes.

Step 10: Flip the chicken over so that it is skin side down at the 15 minute mark. During this time, shake the potatoes around a little bit as well.

Step 11: Check the internal temperature of the chicken and add another minute or two (if needed).
Serve warm and enjoy.

Air Fryer Chicken Thighs and Potatoes

Instructions
- Seasoning. In a small bowl, mix together the Italian seasoning, onion powder, rosemary, paprika, salt, and black pepper.
