Fried Cabbage With Sausage is one of those meals that feels like it shouldn't be as good as it is for how simple it comes together. A skillet, a handful of ingredients, and 30 minutes are all it takes to turn into something golden, buttery, smoky, and satisfying.

💛 Why You'll Love This Recipe

  1. Simple, one-pan meal. Dinner on the table fast without juggling multiple pots.
  2. Big flavor from budget ingredients. The sliced sausage and simple seasonings bring so much flavor to this Southern Fried Cabbage and Sausage.
  3. It's totally customizable. Creamy, spicy, veggie-packed, or low-carb. You choose.

🛒 Ingredients

labeled ingredients needed to make fried cabbage with sausage.
  • Green cabbage - Softens into buttery strands and absorbs all the smokiness from the sausage.
  • Smoked sausage (kielbasa or andouille) - The main flavor booster that seasons the entire skillet.
  • Onion - Sweetens and adds depth as it caramelizes with the cabbage.
  • Butter or oil - Helps everything caramelize for that classic fried cabbage flavor.
  • Smoked paprika - Adds warmth and smokiness without overwhelming the dish.

See the recipe card below for full ingredients and instructions.

💰 Budget-Friendly Tips

Stretch with More Veggies: Cabbage adds volume to the meal without increasing cost. Bell peppers, carrots, or zucchini stretch servings and add color.

Use Store Brands: Make this fried cabbage and kielbasa using store-brand sausage. It works just as great as name brands, and the smoky flavor still shines.

Bulk It Up Cheaply: Add potatoes or a can of white beans to increase servings affordably. I recommend adding canned potatoes since they'll already be softened and just need a little browning.

🥄 Instructions for Fried Cabbage With Sausage

brown sausage, remove from pan then brown onions.

Step 2: Add butter or oil. Stir in onions (Image 3) and cook 3 minutes. Add garlic and cook 30 seconds. (Image 4)

add cabbage and seasonings, saute and add the sausage back.

Step 3: Add cabbage (Image 5) and stir to coat. Season with salt, pepper, paprika, and red pepper flakes. (Image 6) Cook 10 to 12 minutes until tender and caramelized.

Step 4: Return sausage to the skillet (Image 7) and stir. Cook 2 to 3 minutes to heat through. Taste and adjust seasoning before serving. (Image 8)

👩🏻‍🍳 Expert Tips

  1. Cabbage Cooks Down: It shrinks a lot, so it's okay if the skillet looks overfilled at first.
  2. Brown the Sausage: Let it caramelize for deeper flavor and those tasty browned edges.
  3. Deglaze the Pan: If anything sticks, add a splash of broth or water to lift the flavor.
  4. Softer Cabbage Option: Cover the skillet for a few minutes to let it steam and soften.

❄️ Storage, Reheating & Make Ahead

Storage: Refrigerate up to 4 days in an airtight container.

Reheating: Warm on the stove over medium heat or microwave until hot.

Make Ahead: Chop cabbage and onions ahead of time and store until ready to cook.

🥗 Side Dishes or Pairing Ideas

Serve this with cornbread or biscuits on the side, along with mashed potatoes or buttered egg noodles for something hearty. Rice or cauliflower rice both work as simple bases, and southern green beans or roasted carrots make great veggie pairings.

❓ Fried Cabbage with Sausage FAQs

Can I use red cabbage instead of green?

Yes. Red cabbage works fine and will be slightly firmer with a deeper color.

How do I prevent the cabbage from getting soggy?

Cook over medium heat and avoid over-steaming. Leave the lid off for most of the cook time so moisture can evaporate.

Should I wash the cabbage before cooking?

Yes. Rinse, then pat dry well so excess water doesn't steam the dish.

Do I need to cook the sausage first?

Browning the sausage first adds flavor. Remove it, cook the cabbage in the drippings, then combine.

What kind of sausage works best?

Smoked sausage, kielbasa, or andouille work best for flavor, but any fully cooked sausage will do. Even hot dogs can be used too. They won't be as smoky, but they brown well and taste good if sliced and browned first before adding the cabbage.

Ingredients

  • 1 pound smoked sausage, sliced into rounds - ($3.56)
  • 2-3 tablespoons olive oil or butter - ($0.20)
  • 1 medium onion, diced - ($0.62)
  • 2-3 cloves garlic, minced - ($0.20)
  • 1 medium head green cabbage, cored and chopped, about 2 to 2 ½ pounds - ($2.48)
  • ½ teaspoon smoked paprika - ($0.04)
  • salt and ground black pepper, to taste
  • ¼ teaspoon red pepper flakes, optional - ($0.02)

Instructions

  • Brown sausage. Heat a large skillet or Dutch oven over medium heat. Add the sliced sausage and cook for about 5 minutes, until browned on both sides. Remove from the skillet and set aside.
  • Cook aromatics. Add the butter or oil to the skillet. Stir in the diced onion and cook for about 3 minutes, until softened. Add the garlic and cook for 30 seconds, until fragrant.
  • Add cabbage. Add the chopped cabbage and stir to coat. Season with smoked paprika, salt, black pepper, and red pepper flakes if using. Cook for 10 to 12 minutes, stirring occasionally, until the cabbage is tender and lightly caramelized.
  • Combine and finish. Return the sausage to the skillet and stir to combine. Cook for 2 to 3 minutes, until heated through. Taste and adjust seasoning as needed.
  • Serve. Serve warm.

Notes

  • Cabbage texture. For softer cabbage, cover the skillet briefly during cooking.
  • Deglazing. If browned bits stick to the pan, add a small splash of water or broth and scrape to release flavor.
  • Serving ideas. Serve over rice, egg noodles, or mashed potatoes, or pair with cornbread or biscuits.
  • Storage. Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat on the stovetop or in the microwave.

This is one of our most favorite frugal meals because it's got something in it for all of us. The simplicity for me, the meat for my boys, and the cabbage for my daughter.
