Ingredients
 

  • 2 chicken breasts, thinly sliced - ($5.34)
  • 1 tablespoon olive oil - ($0.10)
  • 1 packet fajita seasoning or homemade seasoning below - ($1.66)
  • 2 tablespoons lime juice - ($0.18)
  • 1 bag frozen bell pepper and onion blend, or 2 bell peppers and 1 onion, sliced - ($2.74)

Homemade Fajita Seasoning

  • 2 teaspoons chili powder
  • 2 teaspoons ground cumin
  • ½ teaspoon salt
  • ½ teaspoon paprika
  • 1 teaspoon granulated sugar
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon ground black pepper

Instructions

  • Make the seasoning. In a small bowl, mix all fajita seasoning ingredients until well combined.
  • Prep the ingredients. Slice the chicken into thin strips. Slice the bell peppers and onion if not using frozen.
  • Assemble the freezer meal. In a large bowl or labeled freezer-safe gallon bag, combine the chicken, vegetables, olive oil, lime juice, and seasoning. Toss until evenly coated.
  • Freeze. Seal and freeze flat until ready to use.
  • Bake. Thaw overnight in the refrigerator. Preheat the oven to 400°F and line a baking sheet with foil. Spread the fajita mixture into an even layer and bake for about 20 minutes, or until the chicken reaches 165°F.
  • Serve. Rest for 5 minutes, then serve with warm tortillas and desired toppings.
