Step 6: Shake really good until it's mixed (about 3 minutes). When you can dip a spoon in and have it mostly cling to coat the spoon, you know it's ready to freeze.

  1. Keto option. Swap the sugar for a keto friendly sweetener to make this recipe keto friendly.
  2. Taste as you go. This egg free ice cream is safe to taste before freezing. Adjust sweetness if needed, as it may be less sweet than store bought ice cream.
  3. Mix gently. Stir until well combined but avoid overmixing, which can turn the cream into butter. The mixture should lightly cling to a spoon without running off.

❓ Recipe FAQs

Does this ice cream expand in the freezer?

I totally get that thought process there, but no- it does not. Leave a little space in the jar though, because it helps the ice cream to freeze quickly and correctly.

Can I use a larger jar for a double batch?

I recommend using a half pint jar with a wide-mouthed lid because it helps you to get in there and scoop the ice cream when done. Using a larger jar will mean that your ice cream doesn't freeze as quickly and may not set up if you don't shake it right. Too much liquid to air space ratio can make a big difference.

Can I refreeze the ice cream?

Yes, you can, but you will definitely be able to tell that it was refrozen ice cream if you know what I mean.

  • Shake: Shake the jar vigorously for about 3 minutes, until the mixture thickens and clings to a spoon without running off more than a drop or two.
  • Freeze: Place the jar in the freezer and freeze for at least 3 hours.
  • Serve: Remove from the freezer and enjoy directly from the jar.
