Instructions
Prep the Strawberries:
Wash the strawberries and chop them into small pieces, about the size of a fingernail. Set aside.
Add Cream:
Pour the heavy whipping cream into a mason jar.
Add Sweetener:
Add the granulated sugar to the jar.
Add Flavoring:
Add the vanilla extract and food coloring if using.
Add Strawberries:
Add the chopped strawberries to the jar and secure the lid tightly.
Shake:
Shake the jar vigorously for about 3 minutes, until the mixture thickens and clings to a spoon without running off more than a drop or two.
Freeze:
Place the jar in the freezer and freeze for at least 3 hours.
Serve:
Remove from the freezer and enjoy directly from the jar.
Notes
Sweetener Swap:
To make this keto friendly, replace the sugar with a keto approved sweetener.
Taste Test:
This egg free ice cream base is safe to taste before freezing. Adjust sweetness if needed.
Shaking Tip:
Shake only until thickened. Over shaking can cause the cream to turn into butter.
Best Texture:
This ice cream tastes best when eaten fresh but can be refrozen if needed.
