Brussel sprouts- Fresh, washed, trimmed, and cut into halves or quarters. (If you have extra, try Roasted Brussel Sprouts and Carrots and Instant Pot Brussel Sprouts and Bacon.)

Bacon strips- Bacon adds a salty chewy touch to this dish that pairs perfectly with everything else.

Ranch seasoning mix- Use a packet of ranch seasoning mix, this will provide all of the seasonings we want in a convenient packet.

🔀 Substitutions & Variations

Bacon: Swap strips for ½ cup bacon bits for a quicker version.

Bacon grease: Replace with olive oil if preferred.

Make it a meal: Add chopped cooked chicken. Leftover rotisserie works great.

Raw chicken option: Brown 1 lb cubed raw chicken after removing the bacon, set aside, and add back in before mixing in the ranch. If using raw chicken, use a large skillet or halve the sprouts.

💰 Budget-Friendly Tips

Use bacon bits instead of full strips. They're cheaper and already prepped.

Buy ranch mix in bulk (bigger canisters are far cheaper per serving than packets).

Stretch the dish: Add ½ sliced onion or a handful of mushrooms to increase volume for pennies.

Shop seasonal: Brussels sprouts are usually cheapest in fall and winter.

Rinse well, pat dry, trim off woody ends, then halve or quarter so all pieces cook evenly. Loose leaves can be cooked too, they get crispy and delicious.

Step 1: Heat a 12 inch cast iron skillet over medium-high heat until warm.

Step 4: Add in the brussel sprouts and olive oil.

Step 5: Cook until the brussel sprouts are browned and softened. This will take about 15-20 minutes. Remember to stir occasionally to prevent burning.

Step 6: Stir in the ranch seasoning mix and bacon bits. Toss well to combine.

Step 7: Remove from heat.

Serve warm

Control the caramelization: If sprouts brown too fast before softening, reduce heat and cover for 1-2 minutes to steam.

Crispy bacon every time: Remove bacon early, it will continue to crisp as it cools.

Bigger pan = better: Overcrowding steams the sprouts. Use a large skillet or cook in two batches for the best sear.

To reheat this side dish you can either microwave a serving on a plate for 1-2 minutes (the bacon will be soft) or you can reheat it over medium heat on the stove. This will give you a more crisp texture. Cook until warmed through.

Ingredients
 

  • 4 slices bacon - ($0.40)
  • 1 tablespoon reserved bacon grease - ($0.00)
  • ½ cup onion, diced - ($0.46)
  • 2 pound brussel sprouts, quartered - ($5.96)
  • 2-3 tablespoons olive oil - ($0.28)
  • 2 tablespoons ranch seasoning mix - ($0.25)

Instructions

  • Cook bacon. Heat a 12-inch cast iron skillet over medium-high heat. Add the bacon slices and cook until crisp on both sides. Remove the bacon and reserve 1 tablespoon of the grease in the pan. Chop the bacon once cool enough to handle.
  • Cook onion. Add the diced onion to the reserved bacon grease and cook for about 1 minute, until softened.
  • Cook Brussels sprouts. Add the Brussels sprouts and olive oil to the skillet. Cook for 15 to 20 minutes, stirring occasionally, until the sprouts are browned and tender.
  • Season and finish. Stir in the ranch seasoning mix and chopped bacon. Toss well to combine, then remove from heat and serve warm.
