Step 1: Preheat your oven to 325°F. Line a roasting pan with two large pieces of foil and stagger them in the pan so there’s a slight overlap. You want them long enough that they can reach up and over the ham to seal it in while keeping the ham from directly touching the pan.
Step 2: Place the ham into the center of the pan, place it cut-side down. Add in water or apple juice. (Image 1).
Step 3: Bring the foil up and over the ham and pinch to seal it in the foil "bag" you've just created. (Image 2).
Step 4: Bake for 10–12 minutes per pound or until fully heated through (usually 1.5–2 hours for a 9-lb ham).
Step 5: Make the glaze. In a small saucepan over medium heat, combine honey, brown sugar, mustard, vinegar, spices, and coffee (if using). (Image 3). Bring to a simmer and stir constantly until thickened slightly (5–7 minutes). It should be syrupy. (Image 4).
Step 6: About 30 minutes before the ham has finished cooking, remove the foil from the top and roll it down to the sides of the pan like a ring. This will help to create a dam for liquid to not slosh out of the pan.
Step 7: During the last 30 minutes of cooking, brush your ham with a generous amount of glaze every ten minutes until the ham is done. Return to the oven after each time. (Image 5).
Step 8: Optional* Broil the ham for 1-2 minutes after cooking to make the glaze extra caramelized. Make sure to watch it closely so it doesn't burn.
