    Tortilla French Toast

    This tortilla french toast recipe turns last night's leftovers into a creative "fancy" breakfast. Made from flour tortillas, eggs, and cinnamon, you get crepe-like wraps perfect for any filling!

    When you find yourself with leftover flour tortillas after taco night, it's always a good thing to be prepared. While we love to make Air fryer cinnamon sugar tortilla chips as a snack, having flour tortillas for breakfast is also a thing!

    If you love crepes like my Simple Crepes (with Pancake Mix) or Birthday Cake Crepes, then you'll love this recipe too! While this recipe isn't actually a crepe recipe, it can be used in place of one for a faster breakfast with minimal effort.

    Why This Recipe Works

    1. They don't get soggy! We can all agree that when you leave bread in the egg mixture for too long, it gets soggy. Flour tortillas don't! You'll get a chewy eggy tortilla with a warmth of spice and no soggy fillings to worry about.
    2. Great for any fillings! Preparing a box of cook and serve vanilla pudding is always a great go-to for my crepes, but you can keep this french toast recipe simple by filling the tortillas with whipped cream and berries or Nutella and strawberries.
    3. The leftovers are great too! If you find yourself with too many french toast tortillas left over after breakfast, store them in the fridge and reheat them for later. The leftovers taste just as great as they did when you first served them up!

    🥘 Ingredients

    Eggs- Eggs are the base of the french toast mixture and will give the eggy taste we are looking for.

    Milk- Use some milk to stretch the egg mixture more and to help get a good consistency.

    Cinnamon- This will give us a nice warm spiced flavor in every bite.

    Brown sugar- Use brown sugar for added sweetness, caramelization, and depth of flavor.

    Flour tortillas-You can use any size of flour tortillas for this recipe, but you will need to make sure that they fit within your skillet. Note you'll get more finished pieces from smaller tortillas than you would if you used larger pieces.

    Place a medium sized skillet on the stove over medium low heat.

    Grease with melted butter or nonstick cooking spray.

    Whisk until the eggs are well beaten.

    Add in milk, cinnamon, and brown sugar.

    Whisk well to combine.

    Place a single flour tortilla into the egg mixture.

    Flip to coat both sides. Lift and hold the tortilla over the pan for a moment to drip of the excess egg.

    Place the coated tortilla into the preheated skillet. Cook on both sides for about 1-2 minutes or until golden.

    Place the tortilla onto a plate and repeat until all have been finished.

    Add your fillings of choice (I like Nutella and strawberries).

    Roll into little wraps and dust with powdered sugar, if desired.

    Tortillas. You can use flour tortillas of any size, but you will want to make sure that they are capable of fitting inside your skillet.

    📖 Variations

    There are countless different variations you can take to make this tortilla french toast unique. Different fillings can make these tortillas feel more unique and customizable.

    Here are some tasty filling ideas:

    • Vanilla pudding (the cook-and-serve kind)
    • Nutella or peanut butter and sliced bananas
    • Pudding and mini chocolate chips
    • Whipped cream and sliced strawberries or berries
    • Lemon curd and blueberries

    Don't forget to top them off with a drizzle of melted chocolate and powdered sugar!

    Unlike other french toast recipes, you do not have to worry about the tortillas soaking up too much of the egg mixture. The tortillas are much less absorbent than other bread items. This also means that you can get more servings out of the same amount of egg mixture because a little bit will go a long way!

    You can adjust the french toast mixture as desired to omit cinnamon or add in vanilla, depending on what you'd like.

    I have not tested this recipe with corn tortillas, but you can certainly try them!

    This french toast recipe tastes best when freshest, but you can store it in the fridge and reheat it later. To reheat the tortillas, reheat them 1 or 2 at a time on a microwave-safe plate in your microwave for about 1 minute.

    👩🏻‍🍳 Storage

    Keep any leftover cooked tortillas in the fridge in an airtight container for up to 3 or 4 days. Make sure that they are not warm when you place them into the container, or else the condensation may make the tortillas soggy.

    💭 FAQs

    Can I use homemade tortillas?

    Yes, if you do not wish to use store-bought tortillas, you can use homemade tortillas for this recipe. You may need to adjust the egg-soaking time for them as they may be more absorbent than store-bought tortillas.

    Is flour tortilla the same as bread?

    Flour tortillas are made with the same basic ingredients as bread, such as flour, salt, fats, and liquid/water, but tortillas are different from "regular" bread in that they are unleavened, meaning that there is no baking powder, or yeast, etc to help them puff up and rise as they cook.

    Can I soak my tortillas in the french toast mixture?

    Yes, you can! You can soak each tortilla for up to 10 minutes or so if desired. This will also require you to lengthen the prep time for this recipe, as you will be waiting longer before actually cooking the tortillas.
