🔀 Substitutions & Variations

Flour: Swap all-purpose with bread flour for extra chew and flavor. (See my guide on How to Make Bread Flour if you want to whip some up cheaply.)

Non-Dairy Milk: Almond, oat, or soy milk all work well. Oat milk adds creaminess, almond milk keeps it light. Use whatever you already have on hand.

Toppings & Glazes: Change up the finish for fun flavor twists!

  • Maple Glaze: Whisk 1 cup powdered sugar with 2 tablespoon maple syrup. Add 1 tablespoon milk if needed until smooth.
  • Strawberry Glaze: Whisk 1 cup powdered sugar, 2 tablespoon milk, and ½ teaspoon strawberry extract. Add 1 drop pink food coloring if desired.
  • Chocolate Glaze: Melt ½ cup chocolate chips with 1 tablespoon milk, stir until smooth, dip donuts, and top with sprinkles.
  • Cinnamon Sugar: Mix ½ cup sugar with 2 teaspoon cinnamon. Brush donuts with ¼ cup melted butter or margarine, then roll in cinnamon sugar.
  • Powdered Sugar: Place 1 cup powdered sugar in a bag or bowl and toss warm donuts to coat.

💰 Budget-Friendly Tips

  • Choose the cheapest dairy free milk. Oat, soy, or almond milk all work well. Buy whichever is on sale or use powdered dairy free milk if you already have it stocked.
  • Stretch the dough. This recipe makes 24 donuts, but rolling the dough slightly thinner or cutting smaller donuts or donut holes helps stretch the batch even further.
  • Swap the fat. Shortening keeps donuts fluffy, but margarine or vegetable oil work just fine if that is what you have on hand.
  • Glaze smart. A simple powdered sugar glaze is far cheaper than store bought frosting. A small amount of sugar and water can coat an entire batch.
  • Buy flour in bulk. Large bags of all purpose flour cost less per pound and are one of the most frugal pantry staples.
  • Reuse frying oil. Strain and reuse frying oil for another batch of donuts or other fried foods to stretch your grocery budget. If you fry only occasionally, plan multiple recipes at once so the oil is fully used and the cost is spread across several meals.
    • I don't fry foods often (usually just once a year), but when I do, I make sure to use that oil to its fullest. A weekend of donuts, Cherokee Fry Bread, and Crispy Fried Tuna Patties means no oil goes to waste, and the cost is spread across several meals.

🥄 Instructions for Dairy Free Donuts

warm milk, proof yeast, add melted shortening.

Step 1: Warm the milk in the microwave until it's warm but not too hot. About 110°F is good. Pour milk into large mixing bowl. (Image 1)

Step 2: Add the yeast and 1 tablespoon of sugar (Image 2), let it rest for about 5 minutes until frothy. (Image 3)

Step 3: Add in the remaining sugar, egg, and melted, cooled shortening. (Image 4)

add flour until shaggy, knead until elastic and then proof until doubled.

Step 4: Add the flour and salt. (Image 5). Stir until a soft dough forms; do not overmix. (Image 6)

Step 5: Roll out onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic. Feed the dough more flour, a little at a time, until it's no longer sticky. You shouldn't need much. (Image 7)

Step 6: Place the dough into a cleaned and greased mixing bowl and place a piece of greased plastic wrap over the top. Let rest for an hour or until doubled in size. (Image 8)

Step 7: Punch down the dough (Image 9) and roll it out on a floured surface. Roll dough out to ½ inch thick, (Image 10) then cut into donuts using a donut cutter or round cookie cutter. (Image 11)

Step 8: Place the cut donuts onto a parchment paper lined baking sheet and lightly cover with plastic wrap to rest and rise as you preheat the oil. (Image 12)

boil the donuts in oil, drain grease and add frosting.

Step 9: Heat oil to 350°F. Fry donuts for 1-2 minutes per side, until golden brown. (Images 13 & 14)

Step 10: Drain on paper towels, then glaze or coat while warm. See recipe for different toppings above in the Variations section.

👩🏻‍🍳 Expert Tips

  1. The dough will be sticky. Flour your surface lightly, but don't add too much or the donuts will be tough.
  2. Frying oil must be hot enough. If it's too cool, donuts will absorb oil and become greasy. The goal is around 350°F (medium-medium high heat).
  3. Don't crowd the pan. Fry a few at a time for even cooking. Only cook one at a time in the beginning as you temper the heat to the proper temperature.
  4. Try baked instead. For a lighter version, bake at 375°F for 10-12 minutes instead of frying.

⏲️ Bread Machine Instructions

  • Add ingredients. Measure all ingredients into the bread machine pan in the order recommended by your machine, usually liquids first, then dry ingredients, with yeast added last.
  • Run dough cycle. Select the Dough setting and start the machine. It will mix, knead, and complete the first rise automatically.
  • Roll and cut. Roll the dough to about ½ inch thick on a lightly floured surface. Cut using a 2½ inch donut cutter or round cutters.
  • Second rise. Place donuts on a lined tray, cover with a clean kitchen towel, and let rise for about 30 minutes or until doubled in size.
  • Fry and finish. Heat oil to 375°F and fry donuts until golden on both sides, turning as they rise. Drain on paper towels, then glaze, dust with powdered sugar, or coat with desired toppings while warm.

❄️ Storage and Make Ahead

Room temperature and freezing. Store donuts in an airtight container at room temperature for up to 2 days. For longer storage, freeze unfrosted donuts in a single layer, then transfer to a freezer bag for up to 1 month.

Make ahead options. Prepare the dough and let it rise overnight in the refrigerator, then shape and fry the next day for fresh donuts with minimal prep. Donuts can also be fried in advance and glazed just before serving to keep them tasting fresh.

Ingredients
 

  • 1 ¼ cups dairy-free milk, warmed to 110°F - ($0.40)

  • 1 large egg, lightly beaten - ($0.22)
  • ¼ cup shortening, melted and cooled - ($0.19)

  • 3 ½ cups all-purpose flour, plus more for dusting - ($0.48)

Instructions

  • Warm the milk. Warm the dairy-free milk until about 110°F, warm but not hot. Pour into a large mixing bowl.
  • Activate the yeast. Add the yeast and 1 tablespoon of the measured sugar. Let sit until frothy, about 5 minutes.
  • Mix wet ingredients. Add the remaining sugar, beaten egg, and melted shortening. Mix until combined.
  • Add dry ingredients. Stir in the flour and salt until a soft dough forms. Do not overmix.
  • Knead. Turn the dough out onto a lightly floured surface and knead for 8 to 10 minutes, until smooth and elastic, adding only enough extra flour to prevent sticking.
  • First rise. Place the dough in a greased bowl, cover with greased plastic wrap, and let rise at room temperature until doubled in size, about 1 hour.
  • Shape donuts. Punch down the dough. Roll out on a lightly floured surface to ½-inch thickness and cut using a donut cutter or round cookie cutter.
  • Second rise. Transfer donuts to a parchment-lined baking sheet and lightly cover. Let rise while the oil preheats.
  • Fry. Heat oil in a heavy pot to 350°F. Fry donuts for 1 to 2 minutes per side, until golden brown.
  • Finish. Drain on paper towels. Glaze or coat in sugar while still warm. Serve warm.

Notes

Chocolate glaze. Whisk 1 cup powdered sugar, ¼ cup unsweetened cocoa powder, and a pinch of salt. Stir in 3 tablespoons melted shortening and ½ teaspoon vanilla (mixture will be thick). Add up to 2 tablespoons very hot water, a little at a time, until smooth and shiny. Dip cooled donuts, let excess drip off, decorate if desired, and let set about 30 minutes.
Vanilla glaze. Whisk 1 ½ cups powdered sugar with a pinch of salt. Stir in 3 tablespoons melted shortening and ½ teaspoon vanilla. Add up to 2 tablespoons very hot water, a little at a time, until smooth and shiny. Dip donuts and let set.
Frying. Keep oil at 350°F and fry in batches to avoid crowding.
Glaze adhesion. Apply glaze or sugar while donuts are warm for the best sticking.
Storage. Donuts are best enjoyed fresh. Store in an airtight container for up to 2 days and reheat for 10 to 15 seconds in the microwave.
