💛 Why You'll Love This Recipe
- Simple ingredients. We use some basic and familiar french toast ingredients, but we also add a packet of muffin mix too.
- It's easy to make. While there is a slight learning curve to trying to dip the bread, after your first slice or two, you will really get the hang of it and be surprised by how easy this recipe is to make.
- It's a cheap way to add flavor. Muffin mix packets are always pretty frugal, so using them to add flavor to the french toast works out well for your budget. Not only that, but the dry mix helps to bind the egg mixture to the bread for fluffy results.

🔀 Substitutions & Variations
Bread Options. Use any sliced sandwich bread, or swap in thick-cut French bread. If using thicker slices, let them soak in the batter for a minute before flipping and cooking.
Muffin Mix Flavors. Any muffin mix works, blueberry, raspberry, or whatever you have on hand. Each flavor gives the French toast a fun, unique twist.

💰 Budget-Friendly Tips
Use Store-Brand Muffin Mix. Most store-brand muffin mixes cost under a dollar and work just as well as name-brand versions.
Choose Budget Bread. Any inexpensive sandwich bread works perfectly. Day-old or slightly stale bread actually absorbs the batter better and saves money.
Freeze Extras. Cooked French toast freezes well, so you can batch-cook and freeze slices to avoid food waste and have quick breakfasts later.

👩🏻🍳 Expert Tips
Thick Batter Behavior. Muffin mix batter can be thick, and add-ins like fruit or chocolate chips may sink to the bottom of the dish while dipping the bread.
How to Fix It. Spoon some of the fallen mix-ins over the bread after flipping and before lifting it from the pan. This ensures every slice gets those flavorful bits.
❄️ Storage, Reheating & Make Ahead
Storage. Store cooked Muffin Mix French Toast in an airtight container in the fridge for 3-5 days.
To freeze, lay slices flat on a baking sheet for 1-3 hours, then transfer to an airtight container and freeze for up to 3 months.
Reheating. Reheat slices on a microwave-safe plate for 1-2 minutes, keeping them in a single layer so they warm evenly.
Make Ahead. The batter can be prepared in advance and stored in an airtight container in the fridge for up to 2 days.

❓ Recipe FAQs
You want to aim for a medium to low heat (about 350F) for french toast. The actual heat temp may vary as not all stoves or griddles run at the same heat. Adjust as needed, but keep in mind it may take one or two slices before finding the right setting for you. You don't want to overcook the outside and undercook the middle.
By keeping your cooked french toast on a wire rack lined baking sheet in a warm oven (set to lowest heat setting) you can keep the french toast warm and crispy while cooking the remaining slices.
Absolutely! This is one of those recipes that does great for meal prep. Feel free to make enough for the week and just reheat as needed. Keep them stored in the fridge and enjoy.
