This pancake mix mug cake is perfect for single serving meals, whether at home, in a hotel, or in a dorm room. However, what makes it truly special for me is its appeal to my younger child.

My 4-year-old son adores pancakes; it's his go-to breakfast if given the choice. Hence, I'm always experimenting with new pancake recipes to keep him excited.

From Hot Chocolate Pancakes, Sugar Free Pancakes, and Salted Caramel Banana Pancakes, I've explored various creative twists that make mornings more enjoyable.

This mug pancake recipe is a lifesaver because I can prepare a double batch of dry mix on Sunday, ensuring he has fresh microwave pancakes throughout the week.

Step 1: Scoop out ¼ cup of the mix and add it to a microwave-safe coffee mug.

Step 2: Stir in milk and vanilla. Stir with a fork to combine. Make sure to get around that bottom rim so that everything is well mixed.

How long is microwave pancake mix good for?

This pancake mix in a mug dry mixture is good for up to a few months if kept in a cool dark place in the pantry. Keep it stored in a rodent proof airtight container and it's good for a while. I wouldn't let it sit for more than 6 months though as it will cause the leavening agents to lose some potency.

How to tell when your pancake in microwave mug is finished cooking?

Your pancake is done cooking when the top appears fully set with dry edges and a slightly moist center. Avoid overcooking, as you don't want the top to appear completely dry. A briefly wet center is just right, and it will dry up within a few seconds after you remove it from the microwave. The pancakes will naturally set and may shrink slightly as they cool, which is perfectly normal.

What to serve with pancake mix mug cake?

As a single serving recipe, there isn't much to serve alongside it without having a lot left over. I serve our mug pancakes up with syrup and a small pad of butter after they've cooked and offer a glass of fresh orange juice and some fresh fruits like grapes or berries on the side.

Bulk Dry Mix

  • 1 cup all-purpose flour - ($0.13)

Instructions

  • Prepare dry mix. Add the flour, granulated sugar, and baking powder to a mason jar or airtight container. Secure the lid and shake well to combine. Store until ready to use.
  • Mix mug pancake. Add ¼ cup of the prepared pancake mix to a microwave-safe mug. Stir in the milk and vanilla extract, mixing thoroughly and scraping around the bottom edge of the mug to ensure no dry pockets remain.
  • Microwave. Cook on high for 1 minute, or until the edges are set and the center is just barely moist.

  • Variations. Stir up to 2 tablespoons of mix-ins into the batter before cooking, such as sprinkles, chocolate chips, diced strawberries, blueberries, or maple sugar pearls.
