Pancakes in a mug are the perfect single serving breakfast for when you want something simple, easy, and delicious. Fluffy pancakes cooked to perfection with very little effort.
Prepare dry mix. Add the flour, granulated sugar, and baking powder to a mason jar or airtight container. Secure the lid and shake well to combine. Store until ready to use.
Mix mug pancake. Add ¼ cup of the prepared pancake mix to a microwave-safe mug. Stir in the milk and vanilla extract, mixing thoroughly and scraping around the bottom edge of the mug to ensure no dry pockets remain.
Microwave. Cook on high for 1 minute, or until the edges are set and the center is just barely moist.
Notes
Variations. Stir up to 2 tablespoons of mix-ins into the batter before cooking, such as sprinkles, chocolate chips, diced strawberries, blueberries, or maple sugar pearls.
Storage. Store the dry pancake mix in an airtight container in a cool, dark place for up to 6 months.
Recipe tips. Use a larger mug if doubling the batter. Pancake is done when the edges are firm and the center is no longer glossy.
