🥄 Instructions for Creamy Tomato and Spinach Pasta
Step 1: Preheat your oven to 400°F.

Step 2: In a 9x13 baking dish or large baking sheet (lined with foil or well-greased), add your whole cherry tomatoes, whole garlic cloves, and diced red onion. (Image 1).
Step 3: Nestle a brick of cream cheese in the center of the pan, pushing everything else out of the way so that nothing is underneath. (Image 2).
Step 4: Sprinkle the seasonings and olive oil evenly over the top of everything in the dish. (Image 3). Use your clean hands or a spoon to gently roll the tomatoes around so they're evenly coated. (Image 4).
Step 5: Bake in the oven for 25 minutes. Prepare the pasta during this time.

Step 6: Bring a large pot of salted water to a boil and add in your dry pasta. (Image 5). Cook until al dente. When the pasta is almost finished, add your clean spinach leaves to the pot. (Image 6). Reserve up to 1 cup of pasta water before draining.
Step 7: When the oven finished, your tomatoes will look like (Image 7), but a few minutes 3-5 under the broiler can make it look more like (Image 8). This helps to give a little more depth of flavor as well.

Step 8: Using the back side of a large wooden spoon (or a potato masher) smush everything in the pan until well crushed (Image 9) and then stir to mix together (Image 10).
Step 9: Add in your drained pasta and spinach (Image 11), and then stir well to combine and evenly coat all of the pasta. (Image 12). If needed, stir in some of the reserved pasta water until it reaches your desired consistency.

Instructions
