💛 Why You'll Love This Recipe

  1. Pantry ingredients: This recipe is built entirely from shelf-stable staples, no special grocery trip required. If you've got a can of tomato paste, some dried herbs, and basic seasonings, you're already halfway to dinner.
  2. No added sugar: Many store-bought sauces sneak in quite a bit of sugar, but this version lets the natural tomato richness shine. It's a great option for anyone trying to reduce added sugars without sacrificing flavor.
  3. 30 minutes or less: This is truly a quick homemade spaghetti sauce. While it tastes like it simmered all day, it actually comes together faster than it takes to cook your pasta and prep a side. Perfect for busy nights when time is tight but you still want something comforting and homemade.

🛒 Ingredients

labeled ingredients needed to make homemade spaghetti sauce.
  • Tomato Paste - This thick, concentrated tomato product creates a rich, full-bodied base without the need for long simmering. It delivers deep flavor and gives the sauce its signature color and consistency.
  • Olive Oil - A key component for sautéing the garlic, it also adds a velvety richness and depth that balances the acidity of the tomatoes.
  • Garlic - Fresh garlic is the flavor foundation here, infusing the sauce with a warm, savory aroma that tastes unmistakably homemade.
  • Salt - More than just a seasoning, salt enhances and unlocks the natural flavors of the tomatoes and herbs, bringing harmony to the entire sauce.
  • Italian Seasoning - A balanced mix of herbs like oregano, basil, and thyme that gives the sauce its familiar, comforting Italian essence in just one spoonful.

See the recipe card below for full ingredients and instructions.

🔀 Substitutions & Variations

Substitutions

  • Tomato Paste + Water: Swap with a 15-ounce can of tomato sauce. Reduce added water slightly or simmer longer to thicken.
  • Italian Seasoning: Use a mix of dried basil, oregano, and thyme if you don't have a premade blend.
  • Olive Oil: Any neutral oil (like avocado or canola) works, though it won't have the same depth of flavor.

Variations

  • Creamy Version: Stir in 1 tablespoon of butter or cream at the end.
  • Protein Boost: Brown ground beef or turkey and add it to the simmering sauce.
  • Spicy Kick: Add crushed red pepper flakes or a pinch of cayenne.
  • Cheesy Twist: Mix in some Cream Cheese Alfredo Sauce for a velvety hybrid.

💰 Budget-Friendly Tips

Reduce the meat: If you add ground meat (optional), use half the usual amount and bulk up with veggies or chopped mushrooms. Chopping leftover meatloaf, like our Meatloaf Without Eggs, can help keep costs low too.

Swap proteins: Ground turkey or chicken are cheaper than beef, just brown and simmer in the sauce. Even cheaper is using 1-2 frozen burger patties, just brown, chop, and use. Sometimes I make "chicken parm" using chicken nuggets as the meat source, combining it with this homemade pasta sauce.

In-season produce: If you want fresh, toss in seasonally priced veggies like zucchini or bell pepper during simmering for extra volume and nutrients. See: Seasonal Shopping (What to Buy and When).

🥄 Instructions for Homemade Spaghetti Sauce

saute garlic add paste and water and seasonings and simmer.

Step 1: In a saucepan, heat the olive oil over medium heat. Add the minced garlic and cook for 30-60 seconds, just until fragrant. (Image 1).

Step 2: Stir in the tomato paste and 1½ cups of water. (Image 2). Mix until smooth and sauce-like. (Image 3).

Step 3: Add oregano, pepper, and start with 1 teaspoon salt (you can add more to taste later). (Image 4).

Step 4: Bring to a simmer. Let it cook uncovered for about 15-20 minutes, stirring occasionally. The sauce should thicken and develop flavor. Add more salt, pepper, or water if needed to get your desired flavor and consistency.

👩🏻‍🍳 Expert Tips

  1. Be careful when adding garlic to hot oil - Garlic cooks quickly and can go from perfectly golden to bitter and burnt in seconds. Add it once the oil is warm, not smoking, and stir constantly. If it starts to smell burnt or turns dark brown, it's best to start over, burnt garlic will overpower the whole sauce.
  2. Use a silicone spatula to stir - Tomato paste is thick and sticky, and it tends to cling to metal utensils or wooden spoons. A silicone spatula makes it easier to scrape down the sides of the pan and stir everything smoothly without wasting any sauce.
  3. Simmer uncovered for best results - Leaving the lid off allows excess moisture to evaporate, which helps the sauce naturally thicken and concentrate in flavor. A covered pot will trap steam and can lead to a watery or bland sauce.
  4. Taste after it simmers - Let the sauce cook before adjusting the seasoning. The garlic and herbs deepen as they simmer, and what tastes under-seasoned early on might be just right after 15 minutes. Always taste before adding extra salt!

❄️ Storage, Reheating & Make Ahead

Storage: Cool Homemade Spaghetti Sauce completely before storing.

Fridge: Airtight container, up to 5-6 days.

Freezer: Store in a freezer-safe container or bag for up to 3 months. Thaw overnight in the fridge before reheating.

Reheating: Microwave in 30-second bursts, stirring between each, or warm in a saucepan over medium-low heat with a splash of water to loosen.

Make Ahead: Sauce holds well in the fridge or freezer. Double the batch and freeze half to save time (and money) for your next pasta night.
