Step 1: Preheat oven to 375° and line a baking dish with parchment or lightly grease.

Step 3: In a large bowl, combine ground turkey, finely diced bell peppers, onions, garlic, salt, pepper, and breadcrumbs. If desired, add in half of the ketchup. (Image 2).
Step 4: Shape the mixture into a loaf and place it in the prepared dish. (Image 3).
Step 5: Bake 45-50 minutes, or until the internal temperature reaches 165°F. (Image 4). Spread the remaining ketchup on top of the meatloaf.
Step 6: Let the meatloaf rest 10 minutes before slicing to lock in juices. Slice and serve warm. Enjoy!

Healthy Turkey Meatloaf
Ingredients

- 1 large egg - ($0.22)
- ½ cup Italian breadcrumbs - ($0.41)
- ½ teaspoon salt - ($0.01)
- ¼ teaspoon ground black pepper - ($0.02)
- ⅓ cup ketchup, divided - ($0.20)
Instructions
- Preheat and prep. Preheat the oven to 375°F and line a baking dish with parchment paper or lightly grease.
- Cook vegetables. Heat the olive oil in a medium skillet over medium heat. Add the onion and bell peppers and cook until softened, about 5 minutes. Stir in the garlic and cook until fragrant, about 30 seconds. Remove from heat and let cool slightly.
- Mix meatloaf. In a large mixing bowl, combine the ground turkey, cooked vegetables, egg, breadcrumbs, salt, black pepper, and half of the ketchup. Mix gently until just combined.
