This Healthy Turkey Meatloaf is a juicy, veggie-packed weeknight favorite. Made with 1 pound of lean turkey, bell peppers, and simple seasonings, it’s quick, easy, and perfect for meal prep or family dinners.
Preheat and prep. Preheat the oven to 375°F and line a baking dish with parchment paper or lightly grease.
Cook vegetables. Heat the olive oil in a medium skillet over medium heat. Add the onion and bell peppers and cook until softened, about 5 minutes. Stir in the garlic and cook until fragrant, about 30 seconds. Remove from heat and let cool slightly.
Mix meatloaf. In a large mixing bowl, combine the ground turkey, cooked vegetables, egg, breadcrumbs, salt, black pepper, and half of the ketchup. Mix gently until just combined.
Shape. Form the mixture into a loaf and place it in the prepared baking dish.
Bake. Bake for 30 to 40 minutes, or until the internal temperature reaches 165°F. Spread the remaining ketchup over the top during the last 10 minutes of baking.
Rest and serve. Remove from the oven and let the meatloaf rest for 10 minutes before slicing. Serve warm.
