💛 Why You'll Love This Recipe

  1. You can use your favorite jam. We truly enjoy Welches Strawberry Jam for these, but any brand will work. Including homemade, check out How to Make Strawberry Jam (for Canning). But if you want a different flavor, you can swap out the strawberry jam pop tarts filling for a different jam flavor.
  2. Minimal ingredients. You truly don't need much to get this recipe cooked up. Just a small handful of ingredients, including store-bought pie crust, and you should be good to go.
  3. They're easy to make. No one wants to wake up and spend hours in the kitchen making breakfast. That's why this recipe is so awesome- it's quick! Have your thawed pie crust ready, and within minutes, you can be biting down into a warm and toasty pop tart.

🛒 Ingredients

ingredients needed to make Homemade Strawberry Pop Tarts.

Refrigerated Pie Crusts- You will need some prepared pie crusts that are thawed, at room temp, and ready to use.

-We also use pie crusts in our Easy Chicken Pot Pie, Ground Beef Pot Pie, and Applesauce Custard Pie.

Egg wash- This is a mixture of one egg plus some water. It will act as glue to hold the crusts together and give us a shiny golden colored crust when baked.

Rainbow sprinkles- Adding sprinkles on top will make your pop tarts look fun and exciting!

See the recipe card below for full ingredients and instructions.

🔀 Substitutions & Variations

Strawberry jam. You can use any flavored jam or preserves for this recipe. You can even use some seasoned pumpkin puree for a seasonal twist like these Pumpkin Hand Pies.

💰 Budget-Friendly Tips

Use store-brand pie crusts. Generic brands taste just as good as name brands in this recipe and often cost 30-40% less. Stock up when they're on sale and freeze for later.

Choose affordable fillings. Any inexpensive jam, jelly, or preserves will work, no need for premium brands. You can even use up half-empty jars already in your fridge. Homemade jams (especially freezer jam) are the most cost-effective option.

Use what you have. Sprinkles, leftover holiday sanding sugar, mini chocolate chips, or even cinnamon-sugar can all be used as toppings instead of buying something new.

🥄 Instructions for Homemade Strawberry Pop Tarts

Step 1: Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper or a silicone mat. Set aside.

Softened pie crust, flatten. Use pizza cutter to square and divide into 6 rectangles.

Step 2: Unroll one softened pie crust onto a flat surface and use a pizza cutter to cut off the round sides, turning it into a square (Image 1).

Step 3: Divide the square into 6 equal-sized rectangles (Image 2).

Step 4: Set these rectangles to the side and repeat this with the remaining pie crust.

Step 5: In a small bowl, whisk together the egg wash. Run the eggwash on the crust, around the edges surrounding the filling. This will help hold the pieces together better. Set aside.

Spread jam on 6 rectangles. Top with remaining rectangles. Crimp edges. Place on baking sheet.

Step 6: Place one teaspoon (or up to 2 teaspoons) of strawberry jam in the direct center of 6 of these rectangle pie crust pieces (Image 3).

Step 7: Place one of your reserved pie crust rectangles on top of each filled piece (Image 4).

Step 8: Use the prongs of a fork to crimp the edges together (Image 5). This will keep the filling from leaking out as they bake.

Step 9: Place them onto your prepared baking sheet once finished (Image 6).

Brush eggwash on crusts. Bake for 8 mins. Cool 5 mins. Mix icing.

Step 10: Brush eggwash over the top of the pie crusts (Image 7).

Step 11: Bake in the oven for about 8 minutes or until slightly browned (Image 8). Allow the pop tarts to cool on the baking sheet for 5 minutes.

Step 12: Add the icing ingredients to a small bowl (Image 9). Whisk together until smooth (Image 10).

Drizzle icing, sprinkle rainbow sprinkles on baked pop tarts.

Step 13: Drizzle icing over the top of the baked pop tarts and then sprinkle with some rainbow sprinkles (Images 11 & 12).

Wait a few minutes before eating as the filling will be HOT.

👩🏻‍🍳 Expert Tips

Egg Wash Benefits:

  • Binding: The egg wash acts as a "glue" to seal the pie crusts together, ensuring they hold when crimped at the edges.
  • Golden Color: It enhances the appearance by giving the top pie crust a beautiful golden color during baking.
  • Prevents Leakage: Using egg wash helps prevent the filling from leaking out during baking.
  • Uniform Baking: Without egg wash, you may notice the filling leaking and the top crust remaining white, resulting in uneven baking.

❄️ Storage

Room Temperature: Keep homemade pop tarts in an airtight container at room temp for 2-3 days. They taste best within the first 24 hours.

Refrigerator: If you want them to last a bit longer, refrigerate them for up to 4 days. Allow them to come to room temp before eating, or warm briefly.

Freezer: These Homemade Strawberry Pop Tarts freeze exceptionally well. Wrap individually in plastic or parchment and store in an airtight container for up to 3 months. Thaw before serving (or warm lightly if desired).

🥗 Side Dishes or Pairing Ideas

These pop tarts pair well with a glass of milk, hot cocoa, or a mug of chai, and they make a fun addition alongside sausage links, a small handful of nuts, or a simple smoothie for a quick, balanced breakfast or snack.

❓ Recipe FAQs

Can I freeze homemade strawberry pop tarts?

Yes. These easy homemade pop tarts freeze very well! Just wrap them well in plastic wrap and store in an airtight container for maximum freshness. They will last up to 3 months this way. Allow to thaw before eating.

Can I use homemade pie crust for this recipe?

Absolutely! Feel free to make your own pie crust if desired. We like the simplicity of the storebought dough, but Homemade Pie Crust works just the same, if not a little better.

How long do pop tarts stay fresh?

This homemade strawberry pop tart recipe will stay fresh for about 2 to 3 days in an airtight container at room temperature. That said, they are best when served on the same day.

What is pop tart filling made of?

Filled with your favorite fruit jam, spoon it into the center of each square. Apply egg around the jam to act as an adhesive. Then, top with another piece of dough and seal the edges by crimping.
