This sausage potato and green bean casserole is a tasty dish that the whole family can enjoy. Made with just a few basic ingredients this recipe comes together quickly and cheaply.
Preheat. Preheat the oven to 400°F. Lightly grease a 9x13 baking dish and set aside.
Season the potatoes. Add the cubed potatoes to a large mixing bowl. Add the salt, Cajun seasoning, garlic powder, black pepper, red pepper flakes, and olive oil. Toss until evenly coated.
Brown the sausage. Add the sliced turkey sausage to a skillet over medium-high heat. Cook until browned on both sides. Transfer to the bowl with the potatoes.
Cook the aromatics. In the same skillet, melt the butter. Add the diced onion and cook for 2 to 3 minutes until softened. Stir in the garlic and cook 30 seconds until fragrant. Let cool slightly, then add to the potato mixture.
Add the green beans. Gently fold the drained green beans into the mixture until evenly combined.
Assemble and bake. Transfer everything to the prepared baking dish and spread evenly. Cover tightly with foil and bake for 40 to 45 minutes, until the potatoes are fork-tender.
Serve. Remove from the oven, uncover, and serve warm.
Notes
Make ahead. Assemble up to 24 hours in advance and refrigerate. Let sit at room temperature for 30 minutes before baking.
Slow cooker. Brown sausage and aromatics first, then cook everything on high for 4 hours.
Storage. Store leftovers in an airtight container in the fridge for 3 to 4 days. Reheat before serving.
