Buttermilk (DIY - 1 Cup): No buttermilk? Combine 1 cup milk (whole, almond, soy, or half-and-half) with 1 tablespoon lemon juice or vinegar, stir, and rest 5 minutes. This gives the pancakes their signature lift and tenderness.

Sprinkles: Use rainbow jimmies, which hold their color best. Avoid nonpareils (the tiny round ones), as they bleed heavily into the batter.

Oil vs Butter: Using oil keeps pancakes softer and fluffier. Butter adds richer flavor but can make edges brown faster.

Glaze Variations: Add ½ teaspoon almond extract, swap milk for heavy cream, or whisk in 1 tablespoon cream cheese for a thicker, frosting-style drizzle.

💰 Budget-Friendly Tips

Use Homemade Buttermilk. Skip buying a whole container you may not finish, DIY buttermilk (milk + vinegar/lemon juice) is cheaper and always available.

Buy Sprinkles Smart. Grab rainbow jimmies from Dollar Tree or buy in bulk. They're far cheaper and last for months.

Use What You Have. If you already have whole wheat flour, replace up to 50% of the all-purpose to save money without affecting texture much.

Cheaper Toppings. Skip the glaze and dust pancakes with powdered sugar or drizzle a little melted butter and syrup to keep the recipe budget-friendly.

🥄 Instructions for Birthday Cake Pancakes

Step 1: Add your flour, sugar, baking powder, baking soda, and salt to a large bowl. (Image 1). Whisk together until combined. (Image 2).

Step 2: In a separate bowl, add the eggs. (Image 3). Whisk together until lightly beaten. (Image 4).

Step 5: Pour the dry ingredients into the wet mixture (Image 7), and stir until no dry streaks remain. Do not overmix. The batter will be lumpy. This is okay!

Step 6: Gently stir in the rainbow sprinkles. (Image 8).

Step 7: Let sit for 5-10 minutes while heating your pan.

Step 8: Preheat a greased griddle or skillet to medium heat (about 350°F).

Instructions

  • Mix Dry. In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt.

  • Combine. Add the dry ingredients to the wet ingredients and stir just until combined. A few small lumps are fine.
  • Add Sprinkles. Gently fold in the sprinkles. Let the batter rest for 5 to 10 minutes while heating the pan.
  • Cook Pancakes. Heat a lightly greased skillet or griddle over medium heat. Scoop about ¼ cup of batter per pancake onto the hot surface. Cook until bubbles form and the edges look set, then flip and cook until golden on both sides.
  • Glaze. If using, whisk together the powdered sugar, milk, vanilla extract, and salt until smooth and drizzle over warm pancakes.
  • Serve. Serve warm with desired toppings.
