🔀 Substitutions & Variations
Sausage: Swap with ground turkey or chicken for a lighter version, or use hot Italian sausage for extra heat. Turkey Italian sausage still gives great flavor at a lower cost.
Broth: Chicken, beef, or vegetable broth all work, but beef gives it richer, "meat lover's pizza" vibes.
Veggies: Add mushrooms, zucchini, olives, or even canned mushrooms to stretch the soup affordably.
🥣 Recipe Add-Ins
Want to boost the "supreme pizza" experience? Try tossing in sliced mushrooms, black olives, banana peppers, roasted red peppers, or shredded parmesan. Each adds a new layer of depth and helps stretch the pot even further.
💰 Budget-Friendly Tips
Reduce meat: Use ½ lb sausage and increase veggies (bell peppers, onions, mushrooms) to keep it hearty.
Swap in turkey: Ground turkey is often cheaper than ground sausage, and we add flavor with the Italian seasoning anyway.
Choose in-season or frozen veggies: Bell peppers are cheaper in summer, but frozen peppers work year-round.
Skip the pasta: If you're low on pantry staples, serve over rice for a cheaper alternative that still fills bellies. Or as I do, and simply break apart larger lasagna noodles and use them for the pasta. This way, you can use up the few random stragglers in the box.
🥄 Instructions for Slow Cooker Pizza Soup

Step 1: Brown the sausage in a skillet until no longer pink, breaking it into crumbles. Drain well so the soup doesn't become greasy. (Image 1)
Step 2: Add the sausage to the slow cooker (Image 2) along with the onions, peppers, garlic, pepperoni, tomatoes (Image 3), pizza sauce, broth, water, and all seasonings. (Image 4)

Step 3: Cover and cook on LOW 6-8 hours or HIGH 3-4 hours until the veggies are soft and flavors meld. (Images 5 & 6)
Step 4: Stir in spinach (If using) and pasta, (Image 7) and let cook for 20-30 minutes. (Image 8)
Step 5: Ladle into bowls and top generously with mozzarella. Serve hot with garlic bread or sliced 65% Low Hydration Sourdough Bread.
👩🏻🍳 Expert Tips
- Drain your sausage well. Too much grease can make the broth oily.
- Add pasta at the end so it stays tender but not mushy.
- Taste before salting. Pepperoni and sausage vary in saltiness.
- Use low heat for a longer cook time if you want a deeper, richer flavor.
- Top each bowl individually with mozzarella so it melts beautifully without disappearing into the pot.
- Spinach softens quickly, add it last to keep it bright and fresh.
❄️ Storage, Reheating & Make Ahead
Storage: Refrigerate in an airtight container for 3-4 days. The pasta will continue to absorb broth, so you may need to add more when reheating.
Reheating: Warm on the stovetop or microwave with a splash of broth or water to loosen the soup.
Make Ahead: Prepare everything except the pasta. Add the pasta when reheating so it doesn't turn mushy.
🥗 Side Dishes or Pairing Ideas
Like any great pizza night, serve it up with some greens like crispy cool salad or green beans. Or stick to some carb-loving classics like garlic bread and a fresh loaf of sourdough.
