We love to eat tater tot casserole around here, especially when I don't feel like cooking up anything fancy. But making it in the Instant Pot is so much fun.
My oven-baked Tater Tot Corn Casserole is fine and dandy, but something about cooking in the Instant Pot is always appealing, possibly because there are fewer dirty dishes involved (or at least- it feels that way).

Instant Pot Tater Tot Casserole
Ingredients
- 16 ounces tater tots - ($1.49)
- 1 pound 80/20 ground beef - ($5.94)
- ½ cup yellow onion, diced - ($0.35)

- salt and ground black pepper, to taste
- 1 cup beef broth - ($0.25)
- 1 can (14.5 ounces) whole kernel corn, drained or 1 cup frozen corn - ($0.76)
- 1 can (10.5 ounces) cream of mushroom soup - ($0.70)
- ½ cup sour cream - ($0.47)
- 1 cup cheddar cheese, shredded - ($1.00)
Instructions
- Cook the tater tots. Bake the tater tots according to the package directions until crispy. Set aside.
