Vanilla Yogurt: A creamy base that complements the fruit and granola. I like to use nonfat Greek yogurt, but feel free to use your favorite! I recommend trying our Instant Pot Yogurt.

Strawberries & Blueberries: Fresh fruits that add natural sweetness and color. If you still have some berries leftover, be sure to try them in our Strawberry Blueberry Pancakes too.

Granola: Adds a crunchy texture that contrasts nicely with the yogurt and berries. I don't usually keep granola on hand, so I actually just mix ½ cup of oats with ½ teaspoon of vanilla and 1 tablespoon of maple syrup and bake at 325°F for 15 minutes (stirring midway).

Looking to switch things up? Try adding a spoonful of peanut butter or almond butter to the yogurt for a boost of protein and flavor. You can also add white chocolate chips for extra fun.

Buy Fruit in Season - Strawberries and blueberries are cheapest in summer. Swap with bananas, apples, or frozen fruit during off-season to save.

🥄 Instructions for Strawberry Blueberry Parfait

Step 1: Wash and pat dry the berries. Dice the strawberries into bite-sized pieces.

Step 2: In a glass or jar, start with a few spoonfuls of yogurt at the bottom.

Step 4: Add in a heaping spoonful of yogurt, and then add a layer of crunchy granola. (Image 2).

Step 5: Follow with another layer of yogurt to give the parfait depth. Add a layer of diced strawberries on top. (Image 3).

Step 6: Finish with the remaining yogurt, granola, and berries on top.

Serve immediately for a crunchy treat, or refrigerate for 30-60 minutes to soften the granola. Enjoy!

  1. If you're preparing this ahead of time, be sure to layer the yogurt and fruit separately from the granola to maintain the perfect crunch.
  2. For a nicer presentation, serve this parfait in clear glass jars or small cups to show off the beautiful layers.

Storage - Keep leftover parfaits in the fridge for up to 2 days. Note that granola will soften, so for best texture, store yogurt, fruit, and granola separately and assemble when ready to eat.

Make Ahead - Layer yogurt and fruit in airtight containers up to 24 hours in advance. Store granola on the side and add just before serving to keep it crunchy.

Instructions

  • Prep the fruit. Wash and pat dry the berries. Dice the strawberries into bite-sized pieces.
