Enjoy a slice on the hottest day of summer to keep yourself feeling cool, and you'll find yourself singing praises through every bite.
No bake pies are fabulous options for any time of the year but smores flavors are totally built for summer. (Kind of like this No Bake Kool Aid Pie).

- It's easy to make. The steps needed to make this Smores Ice Cream Pie are simple enough that you can grab the kids and have them help. It's novice-friendly and perfect for beginner bakers!
- Simple ingredients. We won't need much to make this pie, and we will be using simple and basic ingredients in this recipe too. It's pretty similar to a standard No Bake Cool Whip Cheesecake, but with a few tasty additions.

Graham Cracker Crust: You can save time by using a store-bought graham cracker crust. Just note that you may have extra filling, but not quite enough to make a full second pie.
Ice Cream Flavors: Swap in different ice cream flavors for fun variations. Strawberry for a strawberries-and-cream twist, or rocky road for extra marshmallows and texture.
Crust Options: This filling also tastes incredible in an Oreo pie crust for a richer, chocolatey version.
💰 Budget-Friendly Tips
Use store-brand ingredients. Generic graham crackers, marshmallow fluff, whipped topping, and ice cream taste great and cost much less than name brands.

🥄 Instructions for Smores Ice Cream Pie

Step 1: Add the graham crackers to a food processor (Image 1).
Step 2: Blend until fine crumbs (Image 2).
Step 3: Add in the butter and sugar (Image 3).
Step 4: Mix again until the crumbs look wet and combined (Image 4).

Step 5: Press the crumbs into the bottom and sides of an 8 or 9 inch springform pan (Image 5).
Step 6: Place into the fridge for at least 30 minutes or freeze it for as long as it takes for you to make the filling.
Step 7: Add your cream cheese and marshmallow fluff to a large mixing bowl (Image 6).
Step 8: Whip them together using an electric hand mixer (Image 7).
Step 9: Add in the chocolate ice cream (Image 8).

Step 10: Mix together until combined (Image 9).
Step 11: Add the whipped topping (Image 10).
Step 12: Mix together until well incorporated (Image 11).
Step 13: Pour the filling into the pie crust (Image 12).

Step 14: Place in freezer for 4 hours to set. Remove the ring from the springform pan (Images 13 & 14).
Step 15: Slice and serve topped with whipped cream.

- Prep Tip. Before you start, make sure your cream cheese is soft. You can leave it out to warm up while your ice cream stays frozen. The ice cream should be soft like soft-serve, easy to blend but not too melted.

If kept well covered in plastic wrap or stored in an airtight container, you can expect your pie to freeze well for up to 8 days. After that, you may experience flavorless or freezer burn, but the pie should "technically" be good for weeks if kept properly stored.
Serve this pie up on a hot day in summer, for fall holidays, Easter, and all the days in between. There's never a bad time to enjoy the taste of smores, and this pie is perfect for warmer weather and staying indoors.
If you don't allow your pie the proper amount of time to freeze, it may not set completely. You are working with thawed cream cheese and softened ice cream; it will take a MINIMUM of 4 hours to firm up and freeze to the point where you can slice the pie. For best results, make it the night before serving.

Instructions
