Ground turkey (or beef) - This is the hearty base of the casserole. Beef gives the richest flavor, but ground turkey or chicken work just as well and still absorbs the taco seasoning beautifully, while costing half the price.

Doritos (nacho cheese flavor) - These add crunch, big flavor, and that classic "walking taco" feel. Crush them slightly so they layer well without turning to crumbs.

Shredded cheese - Cheddar or a Mexican blend melts into the meat mixture and forms a gooey topping. Shredding your own cheese helps it melt smoother.

Enchilada sauce - This keeps the casserole moist and adds depth, preventing the meat from tasting dry. Red enchilada sauce works best, but salsa is an easy backup.

Optional toppings - Shredded lettuce, sour cream, diced tomatoes, salsa, or jalapeños give the casserole a fresh, customizable finishing touch.

Enchilada Sauce: Swap with salsa (chunky or smooth).

Ground beef: Swap in ground turkey or chicken, or Save Money by Stretching Meat by using just 1 pound of beef. Boost toppings or fillers (beans, corn, peppers) to keep the casserole hearty and satisfying.

Sour Cream: Replace with plain Greek yogurt or softened cream cheese.

Chips: Use Fritos, plain tortilla chips, or chili-cheese chips.

Add-Ins: Canned black beans, canned corn, or diced bell peppers cooked with the onion.

💰 Budget-Friendly Tips

Use less meat. Reduce beef to 1 lb and bulk with beans, corn, or extra toppings.

Buy small chip bags. The $0.98 personal-size Doritos near the checkout is plenty for one casserole.

🥄 Instructions for Walking Taco Casserole

Step 1: Preheat the oven to 350°F and lightly grease a 9×13 baking dish.

Step 4: Spread the mixture into your prepared baking dish. (Image 4)

Step 6: Top with cheese and bake for 15-20 minutes, or until the cheese is melted and the casserole is bubbling around the edges. (Image 7)

Step 7: Add sour cream, lettuce, salsa, tomatoes, green onions, jalapeños, or any of your favorite taco toppings. (Image 8) Serve and enjoy!

  1. Crushing chips: Lightly press the bag to break chips into ¼-inch pieces, small enough to layer, but big enough to stay crunchy.
  2. Even melting: Fresh-shredded cheese melts smoother than pre-shredded.
  3. Cast-iron or not: No skillet? Brown the beef in a pan, transfer the mixture to a greased 8×8 dish, assemble, and bake.

❄️ Storage, Reheating & Make Ahead

Storage: Store leftover Walking Taco Casserole in an airtight container for up to 3 days. Chips will soften, but fresh chips on top fix that.

Reheating: Microwave individual portions for the fastest, easiest method.

Are walking tacos gluten free?

You may be pleasantly surprised to find that this recipe can easily be modified to be gluten free by using a gluten free taco seasoning mixture and gluten free chips.

Can I double the recipe?

Yes, this recipe can be doubled if you have a large enough cast iron pan or if you plan to assemble and bake it in a 9x13 baking dish. A 9x13 should provide about 10 servings worth.

Can I make walking tacos casserole in the slow cooker?

Yes! This recipe can be made in a slow cooker. Brown the ground beef and onions in a skillet on the stove and transfer to a slow cooker. Stir in the sour cream, Rotel, sauce, and seasonings. Cook for 2-3 hours on high or 4-5 hours on low. Turn off the crock pot and top with the Doritos and cheese. Add lid and wait until the cheese has melted before serving.

  • 1 can (10 ounces) diced tomatoes with green chilies, undrained - ($0.96)
  • 1 can (15 ounces) black beans, drained and rinsed - ($0.86)
  • 1 cup corn, frozen or canned - ($0.37)
  • ½ cup sour cream - ($0.50)
  • 1 packet taco seasoning mix - ($0.47)
  • 4-5 cups corn chips, lightly crushed - ($1.16)

Instructions

  • Prep. Preheat the oven to 350°F and lightly grease a 9×13 baking dish.
  • Cook filling. In a large skillet over medium heat, cook the ground turkey and diced onion until the meat is browned and the onion is softened. Drain excess grease.
  • Season. Stir in the taco seasoning, enchilada sauce, diced tomatoes with green chilies, black beans, and corn. Simmer for 3 to 5 minutes, just until heated through.
  • Assemble. Transfer the mixture to the prepared baking dish. Stir in the sour cream until evenly combined. Add about half of the corn chips and gently stir to distribute.
  • Bake. Sprinkle the shredded cheddar cheese evenly over the top. Bake for 15 to 20 minutes, until the cheese is melted and the casserole is bubbling around the edges.
  • Serve. Remove from the oven and add desired toppings before serving.

  • Chip options. Use Fritos, plain tortilla chips, or chili-flavored corn chips. Lightly crushing helps even layering.
