  1. Minimal ingredients. You just need a couple of ingredients to make this Jiffy tamale pie, so don't worry about making expensive trips to the grocery store. You probably already have the items needed in your pantry or fridge.
  2. It's frugal. I love making tamale pie with Jiffy mix because it is always so cheap and easy. Leftover chili is already on hand, and boxed cornbread is about 2 for $1, so this is one of the cheapest dinner recipes we have in our collection.
  3. It's great for stretching smaller portions. If you have a family of 4 but only 2 servings of chili, making this tamale pie is a great way to turn two portions into a filling meal for the whole family.

Chili- Leftover chili works best because the flavors deepen overnight. Any homemade or store-bought chili works.

Jiffy Corn Muffin Mix- Prepare the mix according to the box (egg + milk).
We use Jiffy often in Jiffy Cornbread With Cake Mix, Jiffy Jalapeno Cornbread, and Cornbread Bundt Cake, making it a frugal pantry staple.

Chili Options: Use canned chili (2-3 cans) or homemade chili like Tomato Soup Chili or 5 Ingredient Instant Pot Chili.

Bulking Up Chili: Short on chili? Stretch it by adding cooked veggies (carrots, onions, zucchini) or extra beans/meat.

Cornbread Topping Swap: Swap the Jiffy topping for my Zucchini Cornbread Casserole for a veggie boost, use the same baking instructions.

💰 Budget-Friendly Tips

Use leftover chili. It turns a small amount of meat into a whole meal.

Jiffy mix is usually about $0.60 a box, making this one of the cheapest dinners you can make.

Stretch the chili with beans, frozen veggies, or diced tomatoes if you're short on volume.

Add inexpensive toppings like shredded cheese, onions, or salsa to make the meal feel bigger.

🥄 Instructions for Cornbread Tamale Pie

Step 1: Preheat the oven to 350 degrees F. Grease the inside of an 8x8 baking dish.

Step 2: Spread your chili into an even layer at the bottom of the dish.

Step 3: In a mixing bowl, prepare the Jiffy cornbread mix according to package instructions and then pour it over the top of the chili. Spread it out into an even layer as best as you can.

Step 4: Bake in the oven for 40-50 minutes or until a toothpick can be inserted into the center and come out clean.

Step 5: Let cool 10 minutes before slicing and serving.

Baking Time Will Vary. Cold chili straight from the fridge increases the bake time.
If using warm/room-temp chili, start checking 10 minutes early.

Don't Overmix the Cornbread. Stir just until combined so the topping stays tender and fluffy.

Storage: Store leftover Cornbread Tamale Pie in an airtight container in the fridge for 4-5 days.

Reheating: Reheat larger portions in the oven at 350°F for 10-15 minutes until warmed through. Microwave individual slices for 2-3 minutes.
