💛 Why You'll Love This Recipe

  1. Make-Ahead Friendly. Not many foods hold up to the leftovers test. This Classic Macaroni Pasta Salad tastes even better the next day.
  2. Pantry Staple Ingredients. Nothing fancy or expensive is needed to make this salad, keeping it affordable for most budgets.
  3. Perfect Texture. There's a great balance of textures and flavors in every bite from the creamy, sweet, and tangy, to the crispy celery and soft noodles.

🛒 Ingredients

labeled ingredients needed to make macaroni pasta salad.
  • Elbow macaroni - Its curved shape holds onto the creamy dressing perfectly. Growing up, we always used Ditali pasta. Feel free to use whichever pasta shape you prefer!
  • Apple cider vinegar - This adds a tangy flavor and some balance.
  • Sugar - Offsets the tang for a sweet-savory balance.
  • Red onion - Adds a mild bite that rounds out the flavors.
  • Pickle relish - Adds acidity and sweetness in one hit.

See the recipe card below for full ingredients and instructions.

🔀 Substitutions & Variations

Mayonnaise: Greek yogurt or sour cream can lighten the dressing without sacrificing creaminess. Mix with a bit of mayo for balance.

Apple Cider Vinegar: White vinegar or even pickle juice work well in a pinch.

Red Onion: Green onions offer a milder, more kid-friendly bite.

Sweet Relish: Swap for finely chopped dill pickles if you prefer a more savory salad.

💰 Budget-Friendly Tips

Buy Pasta in Bulk - A large box or bag of elbow macaroni costs less per pound and can be used in many recipes.

Stretch with Veggies - Add extra diced celery, carrots, or bell peppers to bulk up the salad and add crunch without spending more.

Use What You Have - Swap ingredients based on what's in your fridge, leftover ham, eggs, or even canned tuna can make it heartier.

Skip the Fancy Mayo - Regular mayonnaise or even a mayo-yogurt mix gives the same creamy flavor while saving money.

Plan Ahead for Parties - Making a big batch for cookouts or potlucks is cheaper (and more filling) than buying store-made salads.

🥄 Instructions for Classic Macaroni Pasta Salad

Step 1: Boil the pasta until just al dente. Don't overcook it or it'll get mushy.

Step 2: Drain and rinse with cold water to stop the cooking and prevent it from absorbing too much dressing.

mix dressing and toss with other ingredients.

Step 3: Add the mayo, mustard, vinegar, sugar, and spices to a large bowl. (Image 1). Whisk together to combine well. (Image 2).

Step 4: Add chopped veggies, eggs, and cooled pasta to the dressing. (Image 3). Stir until evenly coated. (Image 4).

Step 5: Cover and chill for at least 1 hour before serving for the best flavor.

Step 6: Garnish and serve! Add a sprinkle of paprika or chopped parsley on top. Enjoy!

👩🏻‍🍳 Expert Tips

  1. Rinse pasta thoroughly in cold water to stop it from cooking and keep it from soaking up too much mayo. If your salad becomes too dry you can always add in some more mayo to moisten it back up.
  2. If making ahead, stir again before serving. Sometimes the pasta absorbs dressing and may need a quick splash of vinegar or spoonful of mayo to refresh.
  3. For best texture, chop all veggies finely so they blend well with the pasta. They should all be about the same shape, so every bite is cohesive.
  4. Serve cold, but not too cold. Let it sit at room temp for 10-15 minutes after removing from the fridge to bring out the flavors.

❄️ Storage and Make Ahead

Storage - Store covered in the refrigerator for up to 4-5 days. Do not freeze, as the pasta and mayo dressing will separate and change texture.

Make Ahead - Prepare the salad up to a day in advance, but keep a small portion of dressing aside to stir in just before serving to freshen it up. You can also cook and chill the pasta ahead of time, then mix everything together on the day you plan to serve.

🥗 Side Dishes

Pasta salad pairs well with a variety of dishes, making it perfect for picnics, BBQs, or light meals. Serve it alongside grilled meats like chicken, steak, or pork, or with burgers, deli sandwiches, or wraps. It also complements seafood like shrimp or salmon, and classics like fried chicken.

For lighter options, try serving it alongside a green salad like our Blackened Chicken Salad or Iceberg Salad, fresh fruit or Strawberry Blueberry Fruit Salad, Dairy Free Deviled Eggs, or veggie sticks with dip.

❓ Recipe FAQs

Why rinse with cold water?

Hot pasta keeps cooking after draining and can become mushy. Cold rinsing stops it immediately and keeps the dressing from being absorbed too fast, which makes the salad dry.

Can I make this ahead of time?

Yes! In fact, it tastes even better the next day. Just give it a stir and check the seasoning before serving.

Is this sweet or tangy?

It's a perfect balance of both, but you can adjust the sugar and vinegar to your preference.

What are the ingredients of macaroni salad?

Macaroni salad is a creamy, chilled dish made with cooked elbow macaroni, mayonnaise, a splash of vinegar, yellow mustard, and a bit of sugar for balance. It's typically seasoned with salt and pepper and mixed with crunchy add-ins like diced celery, bell peppers, carrots, and onions.
Many versions also include chopped hard-boiled eggs and pickles or relish for extra flavor. Optional ingredients like cubed cheddar cheese, peas, or ham can be added to customize it further, making it a versatile and popular side for picnics, cookouts, and potlucks.

Why does my macaroni salad get dry?

Macaroni salad tends to dry out as it sits because the pasta continues to soak up the dressing. If you're prepping it in advance, even just 30 minutes. Plan to refresh it before serving. Stir in an extra ¼ cup of mayo right before mealtime to bring back that smooth, creamy texture.

Why do you put vinegar in macaroni salad?

Vinegar is added to macaroni salad to brighten the flavor and improve texture. Its tangy acidity cuts through the richness of the creamy dressing, enhances the overall taste, and helps the pasta absorb seasoning more effectively, preventing the salad from tasting flat or dull.
