  3. Fewer dirty dishes. We combine the oil and seasonings right there on the sheet pan so you don't have to dirty up a single mixing bowl! And if you line your pan with foil the cleanup can only get easier.

🛒 Ingredients

Potatoes- You can use Yukon golden potatoes and red potatoes, or for a seasonal twist, you can use sweet potatoes.

Chicken Drumsticks- Chicken legs are a very cheap cut of meat and will work perfectly for this recipe. If you buy legs in bulk like I do, then you may have some left over. Try our Stuffed Chicken Legs and see How to Boil Chicken Legs.

Seasonings- Adding seasonings can get us the best flavor with the least amount of effort. You will want to use Italian seasoning, onion powder, garlic powder, paprika, salt, and black pepper.

🔀 Substitutions & Variations

Veggie Swaps. Replace Brussels sprouts with trimmed green beans or broccoli florets. If you prefer no veggies at all, skip them and serve with sides like Bacon Ranch Brussels Sprouts and Roasted Brussels Sprouts and Carrots.

Potato Options. Any potato works: Yukon gold, red potatoes, or baby potatoes. Sweet potatoes (1-inch cubes) also roast beautifully.

Seasoning Flexibility. Swap Italian seasoning for your favorite blend (ranch seasoning, Cajun, or lemon pepper all work great).

💰 Budget-Friendly Tips

Buy in Bulk. Chicken legs are one of the cheapest proteins. Buy family packs and freeze extras for future meals.

Swap the Veggies. Use whatever is on sale: broccoli, green beans, or mixed veggies often cost less than Brussels sprouts.

Use Any Potatoes. Clearance potatoes, mixed bags, or whatever you already have on hand work perfectly in this recipe.

Stretch the Meal. This Chicken Leg Sheet Pan Dinner already has protein, veggies, and starch, but you can still add frugal sides. Adding low-cost sides like rice, bread, or a simple salad to make portions more filling without spending more.

🥄 Instructions for Chicken Leg Sheet Pan Dinner

Step 1: Preheat your oven to 425°F. Line a baking sheet with foil or spray with nonstick cooking spray. Set aside.

Step 2: In a small bowl, combine Italian seasoning, onion powder, garlic powder, paprika, salt, and pepper. (Images 1 & 2) Set aside.

Step 3: Wash and cut potatoes into 1-inch cubes or quarters. (Image 3)

Step 4: Trim and halve (or quarter) Brussels sprouts. Peel and slice carrots into roughly ½-inch thick rounds. Add all veggies to a large mixing bowl. (Image 4)

Step 5: In a small bowl or measuring cup, stir together 3 tablespoons olive oil, 1 tablespoon minced garlic, all of the seasoning mixture. (Image 5)

Step 6: Lay your chicken drumsticks over your prepared baking sheet. Brush half of the olive oil seasoning mixture over the chicken legs. Use a brush or your hands to thoroughly coat all sides. (Image 6)

Step 7: Pour the remaining half of the seasoned oil over the carrots, Brussels sprouts, and potatoes. (Image 7) Toss to combine. (Image 8)

Step 8: Spread veggies evenly across the sheet pan. If needed, lift some of the legs and place the veggies underneath to get everything to fit. (Image 9)

Step 9: Bake for 30-35 minutes, or until the chicken reaches an internal temperature of 165°F and the vegetables are tender and browned. (Image 10)

Step 10: Optional (for extra color). Broil for 1-2 minutes, watching closely, to crisp the skin. Let rest 5 minutes before serving.

Serve warm and enjoy!

  1. Crispy Skin: Keep drumsticks skin-side up and avoid overcrowding the pan so everything browns well.

Instructions

  • Preheat. Preheat the oven to 425°F and line a baking sheet with foil or lightly coat with nonstick cooking spray.
  • Seasoning. In a small bowl, stir together the Italian seasoning, onion powder, garlic powder, paprika, salt, and black pepper.
  • Prep Vegetables. Add the potatoes, Brussels sprouts, and carrots to a large mixing bowl.
  • Mix Oil. In a small bowl, combine the olive oil, minced garlic, and seasoning mixture.
  • Season Chicken. Place the chicken drumsticks on the prepared baking sheet and brush with half of the seasoned oil, coating all sides.
  • Season Vegetables. Pour the remaining seasoned oil over the vegetables and toss until evenly coated.
  • Assemble. Spread the vegetables around the chicken on the baking sheet, tucking some underneath if needed so everything fits in a single layer.
  • Bake. Bake for 30 to 35 minutes, until the chicken reaches an internal temperature of 165°F and the vegetables are tender and browned.
  • Finish. For extra color, broil for 1 to 2 minutes, watching closely. Let rest for 5 minutes before serving.

Notes

  • Vegetable Swaps. Brussels sprouts can be replaced with broccoli, cauliflower, or green beans.
  • Potatoes. Any potato variety works. Red and yellow potatoes do not need peeling.
  • Doneness. Chicken is fully cooked at 165°F. Frozen chicken may require additional time.
  • Leftovers. Store in an airtight container in the refrigerator for 3 to 5 days. Reheat in the air fryer for best texture.
