Instructions
Preheat the oven.
Preheat the oven to 375°F and line a baking sheet with parchment paper.
Mix the dough.
In a mixing bowl, combine the muffin mix, butter, egg, and vanilla extract until well moistened.
Portion the dough.
Drop rounded tablespoonfuls of dough onto the prepared baking sheet, leaving at least 2 inches of space between each.
Bake.
Bake for 8 to 10 minutes, until the cookies are puffed and the edges are set.
Cool.
Let cool on the baking sheet for about 2 minutes, then transfer to a wire rack to cool completely.
Notes
Flavor swaps.
Any variety of muffin mix in the same size packages can be used.
Mix-ins.
Add up to 1 cup chocolate chips or white chocolate chips if desired.
Storage.
Store in an airtight container for up to 3 days.
Freezing.
Freeze cookies in an airtight container for up to 3 months.
