This tortilla french toast recipe turns last night's leftovers into a creative "fancy" breakfast. Made from flour tortillas, eggs, and cinnamon, you get crepe-like wraps perfect for any filling!
Heat skillet. Place a medium skillet over medium low heat and grease with melted butter or nonstick spray.
Mix custard. Whisk the eggs in a shallow dish until fully beaten. Add the milk, brown sugar, and ground cinnamon and whisk until combined.
Dip tortillas. Dip one tortilla into the egg mixture, flipping to coat both sides and letting excess drip off.
Cook. Place the tortilla in the hot skillet and cook for 1 to 2 minutes per side, until golden. Transfer to a plate and repeat with remaining tortillas.
Fill and roll. Add desired fillings, roll into wraps, and dust with powdered sugar if desired.

Tortillas. Flour tortillas are recommended. Corn tortillas are untested but may work.

Flavor Adjustments. Omit cinnamon or add vanilla extract to the custard to taste.
Reheating. Microwave 1 to 2 wraps at a time for about 1 minute.
