Mix the filling. In a large bowl, stir together the strawberries, granulated sugar, vanilla extract, cornstarch, lemon juice, and black pepper until evenly coated.
Prepare the crust. Lay the pie crust flat on a sheet of parchment paper.
Fill the galette. Spoon the strawberry mixture into the center of the crust, leaving a border around the edges.
Make the egg wash. In a small bowl, whisk together the egg and water.
Shape the galette. Brush the edges of the crust lightly with egg wash. Fold the edges up and over the filling, crimping as you go to create a rustic border.
