Instructions
Prep the oven.
Preheat the oven to 350°F. Arrange 14 Ritz crackers, face up, on a baking sheet.
Add the Rolos.
Place one Rolo in the center of each cracker.
Soften.
Bake for 3 to 5 minutes, until the chocolate is soft but not melted.
Assemble.
Remove from the oven and immediately top each Rolo with another Ritz cracker, pressing gently to form a sandwich.
Cool.
Allow sandwiches to cool completely before serving.
Notes
Timing:
Check Rolos at 3 minutes. They should be soft and pressable, not melted.
Make ahead:
These can be made in advance and stored for several days.
Storage:
Store in an airtight container at room temperature, in the refrigerator, or freezer. Colder storage makes the caramel firmer and chewier.
