Instructions
Preheat.
Preheat the oven to 400°F and line a baking sheet with parchment paper or foil.
Mix seasoning.
In a large mixing bowl, combine the olive oil, white wine vinegar, sun-dried tomatoes, garlic, pearl onions, salt, and black pepper.
Coat beans.
Add the green beans and toss until evenly coated.
Arrange.
Spread the green beans and tomato mixture in an even layer on the prepared baking sheet.
Roast.
Bake for 15 to 25 minutes, depending on desired tenderness, stirring once halfway through if desired.
Serve.
Serve warm.
Notes
Sun-dried tomatoes.
Both dry-packed and oil-packed sun-dried tomatoes work well in this recipe.
Tomato amount.
Adjust the amount of sun-dried tomatoes to taste.
Onions.
Pearl onions or thinly sliced regular onions can be used.
Make ahead.
Toss the green beans with the seasoning up to 1 day ahead and refrigerate until ready to roast.
Storage.
Store leftovers in an airtight container in the refrigerator for 3 to 5 days.
