Instructions
Melt the oil.
In a large pot over medium-low heat, melt the coconut oil.
Melt the marshmallows.
Add the mini marshmallows and stir occasionally with a wooden spoon until fully melted and smooth.
Add the cereal.
Remove from heat and stir in the Rice Krispies cereal until evenly coated.
Press into pan.
Transfer the mixture to a greased 9x9-inch baking dish and gently press into an even layer.
Cool and serve.
Let the treats cool and set for at least 1 hour before slicing and serving.
Notes
Soft texture.
Stir the marshmallows as little as possible to keep the treats soft and gooey.
Heat control.
Cook over medium-low heat to avoid scorching the marshmallows.
Easy removal.
Lining the pan with parchment paper makes removal and slicing easier.
Flavor option.
Use half coconut oil and half plant-based butter for a milder coconut flavor.
Storage.
Store in an airtight container at room temperature for 3 to 5 days, layering with parchment paper to prevent sticking.
