These chocolate covered cheesecake stuffed strawberries are a delicious dessert that's easy to make. With just a few ingredients you can bite into a juicy sweet and savory strawberries.
Prep the Strawberries: Wash the strawberries and remove the stems. Trim a thin slice off the bottom of each strawberry so it can stand upright. Pat the inside and outside of each strawberry dry with a paper towel. Set aside.
Melt the Chocolate: In a microwave safe bowl, combine the chocolate chips and coconut oil. Microwave in 30 second intervals, stirring between each, until smooth. Set aside.
Make the Filling: In a large mixing bowl, beat the cream cheese, powdered sugar, and vanilla extract with an electric mixer until smooth and creamy.
