A super easy and delicious cherry chip cookie made from boxed cake mix is a great way to get your cookie cravings fixed up and satisfied. This recipe is simple and gives great soft and chewy cookies for very little work. Can't get much easier than that!
Prep the oven. Preheat the oven to 350°F. Line a baking sheet with parchment paper and set aside.
Mix the dough. In a large bowl, combine the cake mix, flour, eggs, and vegetable oil. Mix until smooth.
Portion the cookies. Scoop dough using a 2 tablespoon cookie scoop, roll into balls, and place on the baking sheet, spacing cookies at least 2 inches apart.
Bake. Bake for about 10 minutes, until the edges are lightly golden.
Cool. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Cake mix size: If using a 15 ounce cake mix, add ¼ cup flour for proper consistency.
Shape: These cookies spread very little. Keep dough rounded for smaller cookies.
Frosting: If frosting, lightly flatten dough before baking using parchment or wax paper and the bottom of a glass.
Storage: Store cookies in an airtight container at room temperature for 1 to 2 weeks.
Freezing: Freeze baked cookies for up to 3 months. Thaw at room temperature before serving.
