Instructions
Mix.
In a medium bowl, stir together the brownie mix, eggs, and melted butter until fully combined. Add water only if the dough is too thick.
Chill.
Cover the bowl and refrigerate the dough for 30 minutes.
Prep.
Preheat the oven to 350°F and line a baking sheet with parchment paper.
Portion.
Scoop dough into 1 ½ to 2 tablespoon portions and place on the prepared baking sheet, spacing cookies about 2 inches apart.
Bake.
Bake for 10 minutes, until the edges are set and the centers remain soft.
Cool.
Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Dough consistency.
If the dough is too thick, add water 1 tablespoon at a time until scoopable.
Chilling matters.
Cold dough limits spread and helps create a soft, gooey center.
Butter tip.
Melt butter gently and let it cool slightly before mixing to avoid greasy dough.
Variations.
Stir in chocolate chips or swap part of the butter for melted shortening for a different texture.
Storage.
Store in an airtight container at room temperature for 3 to 5 days. Best within 2 days.
