Celebrate Earth Day with a sweet treat that the kids are sure to love! Cake, whipped cream, and blue jello come together to create personal sized desserts that everyone can enjoy.
Prepare the cake. Preheat the oven to 350°F and grease an 8-inch or 9-inch round cake pan.
Mix the batter. In a large bowl, whisk together the vegetable oil, milk, sugar, vanilla extract, and eggs until combined. Add the flour, salt, and baking powder and mix until smooth. Stir in the green food coloring until evenly colored.
Bake and cool. Pour the batter into the prepared pan and bake for 25 to 30 minutes, until a toothpick inserted comes out clean. Cool completely on a wire rack.
Crumb the cake. Once cooled, break the cake into crumbs and set aside. For the brightest color, use mostly the interior of the cake.
Prepare the gelatin. Prepare the gelatin according to package directions and pour into a bowl or square container. Refrigerate until fully set.
Shred the gelatin. Use a fork to rake through the gelatin, breaking it into small pieces. Set aside.
Assemble the parfaits. Divide the cake crumbs evenly among 8 parfait cups. Spoon blue gelatin over the cake to fill halfway. Add a layer of whipped topping, keeping the cup no more than two-thirds full. Top with additional gelatin. Add a dollop of whipped topping on top if desired.
Chill and serve. Refrigerate for at least 1 hour before serving, or serve immediately.

Notes
Leftover cake. You will have extra cake crumbs after assembling the parfaits.
Whipped topping swaps. Dairy-free whipped topping or homemade alternatives can be used.
