These Birthday Cake Crepes are perfect for birthdays and fun occasions. Made simply with just a few basic ingredients and filled with a vanilla pudding middle, every bite is a delicious treat that's perfect as a dessert or breakfast option!
Prepare filling. Prepare the cook-and-serve vanilla pudding according to package directions using milk. Press plastic wrap directly onto the surface and refrigerate until fully chilled.
Mix batter. In a large bowl, whisk together the Funfetti cake mix, milk, vegetable oil, and eggs until smooth.
Heat pan. Heat a large nonstick skillet over medium heat. Brush lightly with melted butter, coating the bottom evenly.
Cook crepes. Pour about ¼ cup batter into the skillet and immediately tilt the pan to spread the batter into a thin, even circle. Cook for about 2 minutes, until the bottom is lightly golden and the edges are set. Flip and cook 1 to 2 minutes more.
Repeat. Transfer crepe to a plate and repeat with remaining batter, buttering the pan lightly between each crepe. Makes about 30 crepes.
Fill and assemble. Spread chilled pudding down the center of each crepe and roll into a log or fold into quarters.
Garnish and serve. Top with whipped cream and sprinkles. Serve immediately.
