Preheat your oven to 350 degrees F and lay 14 Ritz crackers, face up on a baking sheet.
Add a Rolo in the center of each Ritz.
Bake in the oven for 3-5 minutes, until the chocolate is soft, but not melted.
Remove the baking sheet from the oven and immediately top with another Ritz cracker, pressing down lightly to make a sandwich.
Let cool completely before eating.

Ovens may vary. Check the Rolos after three minutes and if they look soft, they should be good enough for this Ritz Rolos recipe. Remember, you just want them to be squishable- not melted!This Ritz cracker and Rolo recipe can made in advance. They are great for up to a few days if kept stored in an airtight container.Keep these candied crackers stored at room temperature, in the fridge, or even in the freezer depending on your own preferences! By keeping them cold, the caramel becomes harder and chewier, but leaving them at room temperature is great too!
