Honey Mustard Pork Roast

Ingredients

  • 5 lb Pork roast (bone in or out) ($9.80)
  • Salt and Pepper
  • 1 teaspoon Minced garlic ($0.05)
  • ¼ cup Mustard (regular or dijon) ($0.24)
  • ½ cup Honey ($0.56)
  • 4 Garlic cloves ($0.20)
  • 4 sprigs Fresh Rosemary ($0.50)

Instructions

  • Preheat oven to 350 F Degrees and place your raw pork roast in a 9x13 baking dish.
  • Cut some slits across the top of the roast, about ¼inch deep.
  • Cover the roast in some salt and pepper.
  • In a small bowl, combine minced garlic, mustard, and honey with a whisk.
  • Pour the glaze over the pork roast.
  • Sliced garlic cloves in half and place one sprig of rosemary into each slit in the pork. Divide the garlic cloves among the lines and place them atop the rosemary.
  • Bake for 20 minutes per pound, until the internal temperature is at least 145F degrees.
  • Let rest 10 minutes before slicing and serving.

Notes

When making this pork roast with mustard sauce, you can use jarred minced garlic for the sauce (I do). But having the sliced cloves in the meat is nice because 1- it looks pretty and 2- roasted garlic close taste awesome, so it's like a nice treat.
Your pork will be finished cooking when the internal temperature is a minimum of 145F degrees. It may still be pink inside as this is considered rare for pork, but try not to exceed an internal temperature of 165F degrees because then you risk it being overcooked and dry. No one liked dry pork.
With the sweet and tangy sauce on this pork roast, it pairs really great with fresh green salads or an Italian flavored side dish like green beans. You can also pull from the sweetness aspect and serve it with some baked beans as a nice change of pace. It can be served with just about anything and feel complimentary.
With a general rule of thumb of cooking your pork roast for 20-25 minutes per pound you can expect your roast to be cooked within 1hr to 1.5 hrs. Please note that oven times and temperatures do vary, so keep an eye on our thermometer, it will tell you when it's safe to eat.
