Made with fresh fruits and a homemade topping this strawberry peach cobbler really hits the spot. Serve it up while it's warm and finish it off with a nice scoop of vanilla ice cream.
Add butter to the pan and place into oven until butter has melted. Be careful to not let it burn. Remove pan from oven. Set aside
Combine all of the batter topping ingredients with a whisk until combined.
Pour into butter filled pan.
Fruit Filling
In a large mixing bowl combine sugar, flour, cinnamon, and salt.
Add the peaches, strawberries, and vanilla to the bowl. Toss to coat.
Add fruits to the batter filled pan.
Bake for 50-60 minutes.
Notes
Use frozen peaches and strawberries if fresh aren't available (2 cups of each).Reheat cobbler in the oven at 350°F for 20 minutes or in the microwave for 1-3 minutes per serving.Freeze baked cobbler in a disposable pan for up to 3 months (topping may get soggy).Serve at room temperature for a few hours on the same day; refrigerate after cooling, good for up to 5 days.
