Simple Berry Syrup
A delicious sweet and fruity mixed berry syrup that's perfect for your morning pancakes (or waffles)
- 2 ½ cup frozen mixed berries (or fresh and chopped)
- ½ cup sugar
- ¼ cup water
- ½ teaspoon cinnamon
- 1 teaspoon vanilla extract
- 2 teaspoon cornstarch
- 4 teaspoon water
In a saucepan over medium/high heat, all your berries, sugar, water, cinnamon, and vanilla extract.
Heat until bubbling, stirring occasionally.
When the berries are soft enough, mash them with a fork or potato masher while in the pot and return to the heat.
In a small bowl, mix together the cornstarch and water for a cornstarch slurry. Add to pot.
Stir until well mixed and then remove from heat. Let cool, it will thicken as it cools.
Serve over your favorite pancakes and waffles.
